  • 1st Corretto Roast

Got my Ethiopian Gambella green beans and fired up the corretto just now.
Happy with first go and thanks to all you guys for the wealth of posts to help me through.
First Crack was at 7.20, then i wound down the heat too much I think because it took till 21 mins to go into 2nd Crack. Bit cold outside also.
I wasn,t sure how long to leave going after 2nd so i just let it go a minute or two more and then quickly cooled the show down.
end result maybe a bit dark: cs10/11 but still, im more than happy!
So I guess I will try it in a week and until then, give another few small roasts a try.

    Re: 1st Corretto Roast

    Gday tonee,

why not try it in a couple of days? and youre right. Probably a bit too long over all and a bit too long a gap between cracks. Mght be a bit flat and ashy but who knows....

In terms of when to pull it. I generally roast a first batch to the first snaps of sc, another pulled a few degrees shy of sc, and depending on the bean I take gently into rolling sc. Then you know how you like it and thats what matters.

    Have fun,

    Sd

If the roast is going to turn out it will probably peak in a week or so, but since its your first roast of this bean its good to check it along the way and find out when you think it peaks.

Turn the heat down at the onset of first crack and try for about 3-4 degrees/min to second crack. You usually need to keep winding the temp back throughout sc.

That is 3-4 deg rise per minute to second crack

A 3 deg per minute rise will equate to approx 6 min to second crack

Remember time & rate of temp rise starts after first crack

                Re: 1st Corretto Roast

Tried again tonight and first crack was better this time @ 5:30.
But it took HALF AN HOUR till second!! I only backed off the heat gun a small amount this time and lifted it up a bit. Once again it is cold outside. Maybe I should not turn the HG down much at all and leave the height alone, Also i might try turning the fan off that blows the chaff away after 1st crack.
Also, I compared with last nights roast and noticed moisture of some sort inside the airtight one-way-valve bag. Is that normal?

Evening Tonee, what weight of green beans did you roast?
If you are saying 5 min 30 sec to first this is much too fast, you should be aiming for around 12 mins to first crack and of course 30 mins is waaaay too slow to second, first to second should be around 5 or 6 mins, the whole roast should be completed in less than 20 mins, assuming you are roasting amounts of 300 to 500 grams.
Just reread your post, "moisture of some sort in the bag" oil is normal, water is not.
