Woodfired Oven Roasting Ideas

As some may know I got myself a woodfired oven for Chrissy. Cooking in it is magic and the pizzas are amazing.

Ive been thinking to myself, its a great heat source. Could you roast coffee in it? Might have some unique woodfired flavourings? Temps are variable, so I can try different heats.

I was considering having a pot with some sort of paddle to stir the beans from near the enterance. I did see a popcorn device today while our shopping that would have worked, but 60bucks and it wasnt built very well. I doubt it could even stir popcorn!!!

Anyone have an ground breaking ideas they would like to share???

A ball on the end of a handle that has a door for loading and dumping beans

You only need to roll it gently from side to side inside the heated oven

Thanks Gents,

I had a bit of thought about it and decided to blow the budget.  So I bought 2 metal sieves from the dollar tree.  Total cost $6.

I pulled off the plastic handles.  They had little wire hooks to rest of a pot, so I wired them together, and bent the handles a bit and shoved them down a metal pipe from an old wardrobe.  Then I insulated the handle with insulbrite and tape.  Project completed.




I roasted some Brazilian Pulped Naturals, 250gm.  I have to admit that a few got over cooked early on, but I soon figured out that they have to be moved more vigoursly from side to side to stir them more.



F/C about 12-13mins, then the first snaps of 2nd around the end of 15mins.  A bit too quick into second crack, but I would slow it down a bit more in the future by pulling it further out from the heat source.  I had the ball sitting on the floor right in front of the fire, rocking it from side to side.  Here is the results.



So now I want to build a rotisarie style tumbler, that sits off the floor a bit, and I can have the fire on either side of the tumler.  I did see one of these somewhere but for the life of me I cant remember where.  Anyone else seen one?



The Pros for me about this method is that I fire my oven up at least once a week to cook pizza, so why not use the heat source for a weekly batch of coffee?  Cons, well I wasnt sure if the burning wood was snapping or the coffee at first. But then a few more snaps, so I figured it out.

Now, for the taste test.  ;D

Well I couldnt wait so I pulled a shot last night. I havent tasted that bean before but it was nice. My shot wasnt fantastic because it was freshly roasted so more testin to be done. I was a bit worried that there would be an overwhelming smokiness about them, but I couldnt taste it. Going to put 250in my KKTO to compare today.

Ive seen wood roasted coffee or sale on the bay of e.
I also heard a rumour that a Cafe somewhere in south canberra is selling it too, but not sure if thats by the cup or the bag.
Anybody tried it?

I wonder how close it is to the roasting process in a baby roaster. You dont need to wait after roasting with them.

Maybe add something to agitate the beans slightly, a strip of metal of couple of pieces of wire maybe.

Yep. It tasted just like any of my other roasts really, but as I said, new bean. Ive decided to do a KKTO / Woodfired Oven (WFO) faceoff. Ill roast a bean I know on the KKTO and on the WFO. Im not exactly refined in picking out differences so.....

If there is anyone that knows that they have a refined palate and would like to have a taste test Im willing to roast a bag of each and post them to you, if you report your findings here.

I wonder how close it is to the roasting process in a baby roaster. You dont need to wait after roasting with them.

I was thinking the same thing to be honest. I used my WFO roast in my Syphon yesterday morning and it tasted lovely. I dont really understand the reason the baby roaster doesnt need a degas period, so Im not sure my process would be the same.

Maybe add something to agitate the beans slightly, a strip of metal of couple of pieces of wire maybe.

I was thinking of this too. I did keep them moving and kept flipping the ball now and again. Im also going to make a little stand to rest the pole on to keep the beans off the floor to see what difference this makes.

Woodfired Oven Vs KKTO taste test

So anyone stepping forward to test these beans and willing to post up your taste test results up here? PM me asap with your real name and address.

The beans will be roasted today to just into 2nd crack, and Ill be posting a sample of each. The beans will be Mexico Yeni Navan Typica.

For a laugh lets make it a blind test, Ill mark the bags A & B and see what the results are. ;D
