Old School Breadmaker Mods

My Breville ' Ultimate Bakers' Oven' has been getting less reliable. Lately it has started turning itself because the ambient temperature is too hot for the kneading cycle. Then this morning it refused to even start.

I have read lots of warnings about knowing what you are doing when it comes to bypassing the circuits that control it, so I decided on an old school solution.
