I believe this attachment would be sufficient,
The hook if tight should do the job
This will allow for easily attaching and removing of the probe

I would not take the chance on exposed plastic parts and would cover it with some sort of heat protection hose or fabric
Also provide a barrier from hose clamp

Does anyone know if the heat during roasting will damage the black plastic handle on the TC or the yellow wire as in my pic below?
Id prefer not do drill at this stage.
