Ronin gets my vote - they're using Genovese coffee from Melb and Bonsoy so I was able to get a very good soy latte without it tasting wierd (OK, so I might have almost cried and drank 3!)
As a plus, the french toast was the best I've ever had, and the scrambled eggs on toast were amazing. This place would stack up in Melb/Syd (no sign out front either, easy enough to find though) so definitely worth a visit...

Ronin is one of my regulars when in Singapore - 40 hands and Chye Seng Huat Hardware coffee are also on my list of places worthy of spending money on a cup or three.

Nylon Coffee Roasters (across the road from the Pinnacle@Duxton) is also worth checking out.
