    Hello CSes!

    The workshop weve all been waiting for: Hazels Orientation to Cupping, September 15th, Saturday, 2:30-5:30

    Hazel De Los Reyes, the current Australian Cupping Champion, is sharing with us her thoughts on cupping and telling a bit about the session:

    "Cupping is an essential skill to those involved in the coffee industry. Roasters base purchasing and blending decisions on the potential they can see in the cup. Baristas these days are also looking to the cup to guide them in their espresso preparation. So what is this special industry tool?

    Cupping is to coffee what tasting is to wine. Judgment is made of a coffee’s greatness (or lack of) through assessing the qualities it presents in the cup. But it’s not all sniff, slurp and spit. Consistency in protocols and understanding of the cupping language are vital to its usefulness as a tool.  

    Along with a brief introduction to coffee, participants will also be treated to a sample roast where Hazel will explain the basic phases that coffee beans go through from green right through to the crackling finish. Then it’s coffee cupping all the way.

    Firstly, Hazel will explain the purposes of cupping and the processes involved. Cupping tools such as bowls, spoons, cupping forms and terminologies will also be discussed. Employing industry-recognized protocols, participants will then cup some freshly roasted single origins and afterwards discuss their cup qualities"


    Logistics:

    Where:    Session to be held at Hazels Roastery at Marickville, map would be provided in a later stage.
    How: to enroll, just PM di bartoli with your details: first name, last name, email address, username (if a member) and a contact phone number. If youre
      on our data base already, just request enrollment with the same subject line as this post.
    How much:    Session cost is: $90 per person (please state in your message your preferred method of payment: electronic transfer or Credit Card).
    Who: No pre-requisites are stated for this session. It doesnt matter what gear you have or how long experience with a machine you had. You do need to be    
      passionate about coffee (Id say that applies probably to 99% of all CSes)....curious about the process from a green bean to the cup and would like to
      challenge their pallet.
    How many:    Limited group of 6-8 people, first-books-first in basis.

    OMG, Ofra; how can you post this notice without mentioning that Hazel is the current Australian Cupping Champion!

    I have had the pleasure of cupping with Hazel a few times and it has always been a lot of fun. Although last time it would have been nice if she had gotten one or two fewer cups right ;P

      Our upcoming Basic Home Barista Workshop with Hazel, will take place on August 25th and not 26th as published.

              It may compromise our ability to judge and sense different tastes, aromas, flavors in the coffee, seriously!!!! :

                  If you scroll to the right and a little up, youll see that the roastery is equidistant from St. Peters and Newtown stations. And is walkable in my opinion.

                    WOOT!!! Only one more sleep!!!

                    I can pick people up from Central, Newtown or Speeders if you need a lift, I can fit another 3-4 people in the car.

                      Just got back from my rescue mission to the cupping course.

                      After 3 hours slaving over hot cups of coffee in a room crammed full of people I thought Id show up with some deoderant and perfume when theyd finished.

                      Im waiting for their feedback.

                      Hazel was certainly all hyped up as they were leaving (maybe it was too much caffeine).

                        As usual, I learnt something new from Hazel. I wont be able to put names to flavours any better (cant name flavours you dont know!), but I least Ill have a starting point (and some sort of process) to actually notice all the flavours Ive been missing.

                        Interesting things about roasting as well. Hopefully Renzo will find a nice roaster to stock.

                          Twas a good course to do. I suffered a little sensory overload, I think and had some trouble picking some of the different coffees, but it certainly gave me a good starting point to work with at home.

                            Great experience, and certainly eye opening and challenging

                            A HUGE thanks to Hazel and her team for an enjoyable and informative afternoon - totally recommend this to anyone serious about learning more.

                            Also, really great to put some faces to names - look forward to getting together again down the track

                              Hi all

                              Yes first thanls to Di Bartoli Coffee Centre for the organisation and to Hazel and particularly her helpers that grinded, filled and cleaned all the afternoon. Much appreciated.

                              First thing. I had attended a cupping before at another coffee place (not a sponsor here) that was OK but I didnt learn that much. It was 2 hours with 18 people. The Hazel course was far more indepth and has less people. Thats why I think I have learnt so much more.

                              Just of the top of my head notes: Trying salty, sweet, bitter, sour & led me to realise that my tongue is not to be trusted as much as I thought. These were at the level of detection except for the sour which I thought was the bitter and which for me was very distinct.

                              The cupping enabled me to better ascertain what acidity was like, especially after the cups were cooler. It also showed me that my aroma senses are good but my taste may not be as desriminating yet. More practice is required.

                              Getting some expert led practice at identifying characteristics in a cup
                              was the really good bit. Its also something that I think Ill do again as its something that is difficult to pickup by yourself.
                              It was an excellent afternoon.
