Got a second copy which arrived after a long wait and it has been assigned to magazine rack at the restaurant , hopefully will attract a few readers and more awareness of coffee in general.

That section of the magazine about the Italian perspective reminded me of the times back in the 80,s(showing my age now ) when mature aged waiters were common in restaurants, coming from Greek and Italian backgrounds.
These were the true waiters unlike the backpackers today whereby if they could carry 2 plates, they were hired due to fact that immigrants were going to work at the mines because of the money, causing a shortfall in professionals.
These greeks n italians were immigrants who had a family to support so they made their start here by waitering. They had arrogance, but jeez they had skills and knew how to make a good cuppa.
A barista in Italy up to today, is regarded as a professional. They have families to support and it,s a long term career for them.
       Enjoyed reading it.

Yeah well...i couldnt wait any longer! i,m subscribed since June and havent received  the August issue, so just went to the newsagent and picked one up. If it ever does turn up in the mail, then i,m doing the publication a favour by leaving the spare mag at the magazine stand in my restaurant for all to see and digest.

Certainly was an eye opener reading about Italian baristas. 25% of the time making coffee, 25% manning the salami slicer and food service, 25% serving gelati(i,d especially enjoy that!), and final 25% on beverages. Looking at the pics, they are certainlysmartly and formally dressed compared to our aussie counterparts. My fav cafe, the best barista is covered in tattoos, nerdy glasses and uni T shirt.
Certainly is a world class publication.

    Glad you got a read..

Yes... In Italy you can be in teh bar for 12 months or even more before that let you make a crap coffee ( most of it is carp if ya ask me.. Well not crap, but not to my liking)

My daughter works for one here and she is still not allowed to make a straight shot type of drink.. Mocha or Chillers and all teh food etc BUT NOT a Flat White or any thing else for clients. For staff yes; but paying customers NO even after some 9 months.
