Im more interested in the Clover machine than the siphon one.
BBB has a clover machine (US$11k I believe). Anyone have any thoughts as to its impact on the way coffee is served?
James Hoffman predicts more widespread use of the Clover in 2008. Its quite expensive for a glorfied french-press/vac-pot style machine. Sure, its got a PID and even an ethernet plug to send info to Clover but will it take off?

having travelled japan (before the snob bug hit, but still when good coffee was an important part of life), ithese type of syphon cafes places were the norn in japan. the espresso hadnt really taken hold, but most towns had small mum and dad cafes, where the lines of syphons were like in the article, but with out the computer and robotics.
they did make a good brew.... and even the more enjoyable trying to communicate with the old japanese m&d serving us!

Holey smokes Batman!!! Im sure the coffee experience from a $20,000 machine would be enjoyed more though, if the upgraditis had only extended to replace the $10 bar stools for something customers could feel more comfort in their butts.

I first saw and had a cup of the siphon coffee in Singapore between 15-20 years ago.
Thought is was a really interesting concept. Never seen it in Australia.

SIphons have been around for years.
No novelty any more.
I suppose there might be a reason why you dont see a lot of them about.

Doesnt even make espresso....
:questionIt makes brewed coffee, as does another high-end coffee maker, the $11,000 Clover, which makes one cup at a time. Together, they signal the resurgence of brewing among the most obsessive coffee enthusiasts.
What do you think of this? The siphon sounds interesting just for the novelty value.
