        Id be happy if I got something that looked like this from a cafe (I dont expect too much do I?)   but I think I must be leaving too much time in between pouring the espresso and getting the milk into the cup - and so the crema is going a bit weird when I pour the milk onto it.

        I should probably be texturing the milk while the espresso is pouring, but I like to watch it coming out, so that I can turn the lever off before it starts to blonde. (I have a Giotto PP...)

        Hmmmmm, clearly I need that third eye and third arm...

          Hey Mazz,

          Thats what they always look like at the start and for a few thousand after that too! My hint would be maybe that as you start pouring the milk into the espresso, even if the crema has dissipated a bit, pour your milk evenly all over the surface of the coffee, so that it blends "preparing the canvas" so to speak. As the cup starts to fill, you should have an even coloured brown to work with for pouring your pattern.

            Hey Mazz,

            Once you get the milk texturing nailed you wont need to focus so much on it, you can then focus your attention on the pour as your texturing, for a single cup for example i will lock in the portafilter and start the pour immediately, grab the jug(that has already been purged)and start texturing, they finish at the same time, pour my art and then clean up....youll get the hang of it

                    Couple of mediocrities, but its all I have photos of.. First at home, second at work.



                    Second one - top heart a bit squashed, woops. Find it much harder to pour tulips than rosettas in little tulip cups.

                            its my new work place in crows nest, nsw,, they use the top quality coffee: campos,, its called eighty ate cafe restaurant @88west street,, and the picture below is cappuccino,, not a flatwhite,, so its a bit harsh on the surface because of the chocolate powder,,

                              Try in a plain white or light Turquise... It will make all the difference ;D


                              As a quality exercise...

                              Send me 6 of those red ones and I will post back what they do for me and my art... I am sure you will agree that the cups are the problem.

                                nah,, ive been using campos superior blend for quite sometimes,, its from single origin and 100% arabica,, very sensitive,, the crema is very thick,, thats why,, cup does matter but not that much,,
