Greg, it looks as if you pulling through too fast. As you pull through try to lift and flatten the pitch of the jug so that you are pouring the thinner milk. Remember to keep the pour slow but steady, this will draw the leaves to the centre instead of the bottom.

All those suggestions above sound like theyll get you there Greg.
Not that Im any expert.
But today Hazel made me texture the milk and practice a couple of rosettas for out coffee this afternoon when I dropped in to stock up on beans for my birthday gathering this weekend.

In a nutshell, she said all those things (and I still stuffed up the first one severely).

An interesting observation by Hazel is that everyone has their own style and at competitions, they can tell which rosetta belongs to who.

She says she can see my style now after having seen some photos and todays attempts.

Beautiful crema and microfoam, did a slow shake, leaves appeared before my eyes, lifted jug to wipe, heart!

Are you shaking all the way to the sides?
Maybe longer leaves wont draw in so much.

Have your pitcher "closer/\/deeper" in the cup as you wobble the pitcher.... and a more aggressive wobble is needed?

TG: The leaves are fine to start with; theyre perhaps half the width of the cup which isnt heaps but its enough.

MS: Yes I keep the pitcher very close to the liquid surface on the wobble which allows mixing with the crema, and then draw it higher for the stalk which should make it fall through with only a thin line. Theres certainly no indication of a thick stalk overlaying the leaves which is a good sign, but why the leaves are being so distorted by the final wipe is anyones guess.

Ill try to grab a video next time.

Hi Greg,

It looks to me like you are starting the rosetta too far back in the cup. Try starting it right against the wall of the cup opposite the jug. If you tilt the cup towards you a little when you start, the pattern will surface sooner. You probably want to get a few wiggles in right against the back of the cup before you start to draw back. That way, you will have your base leaves sitting right against the other side, so when you strike through, you wont distort them as much.

Of rosettas (with hearts on the ends). I found this off some site. Essentially thats what the leaves should look like (everybody has their own style) before your draw through the leaves to make the stem.

Nice, I can only see 27 but thats all I need. I guess I havent got the best cups in the world for it but Ive done it before in these. Nearly afternoon coffee time so Ill give it all a shot soon!
