Try slowing down the initial pour just a bit, then try pour for a little longer before you start shaking to make the leaves. Also try shaking the jug further out to each side (not just a jiggle, more of a side-to-side rocking).
I seem to get that sort of shape whenever I pour too fast too early.
My latte art needs a bit of a tune-up. Ive had lovely rosettas in the past but recently Ive either had too much foam which just smothers whatever Im trying to do, or I get this sort of thing, where I get leaves / petals OK but they dont stay put. I dont feel as though Im doing anything different but clearly I must be. I basically pour it down the side of the mug, bring the pour to the middle, shake and draw towards me, and finally wipe the stalk of the leaf away. The final wipe process pulls the leaves / petals inward and deform them rather than them staying put.
