    Re: Experimenting again

My mum is mad for some cinnamon stick ground up with her beans, it is tasty.....if you like subverting the taste of perfectly delicious freshly roasted beans. The cardamom sounds fantastic though RH - YUM.  :P

I reckon if you are going down the post roast flavoured road, you can also try bunging a vanilla pod in the container you store the beans in and it will very subtly permeate the beans as they degass.

Bl**dy coffee snobs - we just cant leave things alone can we!!!!  : But you know what they say, variety, and spice = life   ;D

    Re: Experimenting again

    Ive done it!
Ive mixed cardamon post roast and its a lovely change of pace!
HEres what you just have to try... :
grab a bag of cardamon seeds- not the pods- theyre a woolies for about 70 cents of 8 grams. IN a little yellow and green bag from Menora.
When you place your beans into rocky for a shot- add just 3 or 4 of the little seeds!

You can smell the fragrance right away as you grind and then a deep scent in the espresso itself-
Now Ive jsut tried it a s a doppio without sugar and its nice but I reckon a latte could be real special.
It even says on the back of the pack- delicious crushed into coffee!

    What else can I try...mmmmm

Looking forward to hearing that result! - I was eyeing off my dried juniper berries earlier but kept having visions of a sandel and some old guy yelling "but theyre MY juniper bushes"

    Re: Experimenting again

Well, just roasted 126 grams of Brazil Datera (which should be relatively bland) and added about a teaspoon of chilli flakes in the last 2 minutes. [smiley=evil.gif]

Thought about adding chilli powder, but that would just burn, and the stench of that can be quite overpowering.

Would have liked to add a whole chili, but dont have any fresh ones at the moment. [smiley=2vrolijk_08.gif]

Will report back on this ......................

With my old machine I used to gind cardamon with the coffee
I tell you what it was nice.
I havent tried it since becoming a CS- Id forgotten actually in favour of teaching my tastebuds to distinguish coffee tastes. I reckon I might try what youre suggesting. :

Interesting concept there Grendel. One which must be tried and experimented with.

One also must try something other than moths and beetles.

Im doing a roast today. Maybe I should throw some chilli in ......

A part of making real hot chocolate is to add chilli .....

    started a topic Experimenting again

    Experimenting again

I just love experimenting and a colleague at work loves coffee - in fact she loves spiced coffee, she pops a couple or cardamon pods and cloves in her french press when she makes coffee.

Now, as a rule Im not that fond of flavoured coffees (Ok I utterly loathe them) but I have had, and enjoyed some spiced coffee in various parts of the world.

I began to wonder what would happen if I introduced the spices during the roasting process.

I got 5 cardamon pods and 5 cloves and put them beside the popper then started the roast.

I decided that I didnt want to burn the spices so I waited until 2 minutes after the second crack and tipped them in.

It was really fascinating to watch and smell - the pods and cloves expanded in size and changed colour (must get some photos).

The coffee was Bali Gunung Batur and when I cupped my first roast of this I may have been unkind. I probably missed something in the roasting becasue this time it was an absolute powerhouse cup - it cant just be the spices. They were certainly present, but not overpowering and it made for an interesting drink.

Not to my tastes every day but an interesting change - and hopefully a surprise for my colleague - pre spiced beans!
Working...
