Nutmeg and cinnamon are my next ones - Rather than try and drink these coffees as espressos (cause it ruins it for me) I am going to cold process them and use them as the base for my Christmas coffee liqueur.

You might want to try a test run using the various spices before you do your big one(s). Its been my experience that with most flavored coffees very little of that added flavor comes through in CP.

I found this very disconcerting years ago when I was experimenting with doing CP batches with flavored coffees. Im not a fan of cinnamon on much of anything other than a sprinkling of it on a few foods so I never did any of just that, I suspect that it would do better than most. The best flavored batch I ever had was a Pumpkin Pie flavoring. Even it though was very weak when compared to the same beans brewed up or made in a french press, where the flavor was almost over-powering. With cinnamon and nutmeg being two of the biggest components of that flavoring I think theyll come through far better than most. You may have to bump up how much of them you use though if youre looking for a strong flavor.

Ive experimented with putting a little bit of grated orange zest in the PF with some nice chocolatey coffee. Its very subtle in the cup, but quite nice. I call it a jaffa shot.

Ive mixed cardamon post roast ... grab a bag of cardamon seeds- not the pods- ... When you place your beans into rocky for a shot- add just 3 or 4 of the little seeds!
RH Would these be pre-roasted by any chance?

When I was taught to make Middle Eastern style coffee by a Palestinian mate a couple of decade ago, he would take the pods, roast them in a heavy based pan, remove the seeds from the pod and pulverise them before adding them to the brew. I imagine that roasting could make quite a difference...

            Best wishes, Russell

Interesting idea Nunu. Will have to give it a try sometime :-)

I wonder if you could actually add a bit of real chocolate to the PF? it would just melt straight through into the coffee.

Guys- I just made a doppio cappa with the caramon and boy it was magnificent!
I am unsure if they are roasted seeds- but they do look it!
I might buy a vanilla pod and give it a go infusing with the beans post roast before the ginder. :
I reckon the cinnamon might be a nice touch too.

If it were courvature youd probably find all kind of weird channels in your puck - dunno about that one - Id hold it in an absinth spoon under the pour. . .

                      Re: Experimenting again

Well, just tried my Chillian Brazillian, as espresso, after 48 hours degas. It was quite nice, considering its just a SO Brazillian. Couldnt really taste any chilli, but there was something there. As I like my chilli hot, maybe it didnt register for me, but other non chilli heads might detect it.

Still, much better than I expected for a SO Brazillian. Maybe I should have done another roast without chilli as a control ..............

More chilli next time I think. Maybe a bit of chilli powder in the PF? Tomorrow perhaps. Too late for more caffeine now.

                            Re: Experimenting again

Just tried a blend of mine with a clove of cardamon added to the grinder.
                            - quite a nice touch I feel.

Over the next few days might try adding a :

                            corriander seed or two

                            a cumin seed or two

and a fraction of a cinnamon stick

                            a few chilli flakes

although not at the same time :-)

Wont know how it is until you try it ...............
