    Unfortunately Frappe cant be made with espresso.
    Strong instant coffee is called for in this recipe  

    Something to do when, foams are produced by surface active ingredients called surfactants.  
    In coffee foams the surfactants are proteins.  With instant coffee, which is essentially brewed coffee from which most of the moisture has been removed,

    This the recipe


    1. Place 2 teaspoons of instant coffee, sugar to taste, and a splash (3-to-4 tablespoons) of cold water in a shaker, jar, or drink mixer. Cover and shake well for 30 seconds or, if using a standing or hand-held drink mixer, process for 10 seconds to produce a thick foam.

    2. Place a few ice cubes in a tall glass. Slowly pour the coffee foam into the glass. Add a splash of milk (evaporated or regular), if desired. Fill with water until the foam reaches the top of the glass. Serve with a flexible straw/s

    A frappé is nothing more complicated than instant coffee, sugar, and a small quantity of cold water shaken vigorously together to produce a thick foam, then poured over ice in a tall glass, and finally topped off with milk or water. That basic formula gets muddled not only by personal habits but also by the homespun guidelines passed on by its practitioners. Coffee and sugar are mixed by the heaping spoonful, without specifying the size of the spoon and the heap, rather than by grams or level measuring spoons. Water is dosed by finger width, without specifying whose finger, as in “pour two fingers of water into the shaker.”

    It may therefore be best to describe the frappé formula in terms of volume proportions. A gliko (“sweet”) frappé, for example, is typically made with between 1 1/2 and 2 measures of sugar per 1 measure of coffee. To prepare a metrio (“medium sweet”), up to 1 measure of sugar should be mixed with 1 measure of coffee. To create a thick, creamy foam, the ideal coffee-to-water ratio is about 1 part instant coffee per 4-5 parts water.

    The following recipe should be viewed as a beginning and not an end. Use it as a departure point, making adjustments according to your own tastes and moods.

    I always prefer my cold coffee beverages made on manual brewing methods. While my take on a Frappe isnt the greek version (cold coffee with lots of foam on top) I use the french definition of frappe (shaken and/or chilled) heres how:

    12 grams coffee - ground to about french press
    30 ml pouring cream
    teaspoon sugar (cold coffee always seems to need sweetning)
    milk to fill glass
    ice for shaking (in cocktail shaker I prefer a boston shaker as it can give more aeration - mind you I prefer them anyway)

    Prepare the aeropress as you normally would. (running sufficient hot water through paper etc). With around 40 mL of hot water brew the coffee using the inverted aeropress method (remove filter/cap and place plunger on the table top - so that when coffee is added it will sit against the black rubber- add the coffee and water and steep for around 45 seconds. Reattach cap/filter and plunge as you normally would). Add sugar to the prepared coffee, pour in cocktail shaker and swirl until sugar is dissolved. Add cream and ice and shake until the container is too cold to touch. Pour into serving glass. Top up with milk.

      I have two problems with this beverage.

      First - I had to buy a can of Nescafe. Being the owner of a +2000€ coffee equipment this is a real trauma. :P

      Second - When I fill the glass with water, the mix-foam of Nescafe/sugar reaches the top of the glass as is described in the receipe. Problem is that the water and the coffee mix (in form of foam) do not blend well, and when you use the straw to drink ,you drink mostly "dirty water" which, frankly, it tastes awful.

        Hola Oton

        You need to mix the foam that rises to the top with the milk & water that goes to the bottom by stirring the ice & liquid with the straw

        So stir & sip - stir & sip

        You can also use your drink mixer to make them, (the foam part) about 10 to 15 seconds should do it

                  Apart from coffee
                  Greek Olives, Feta Cheese, & Olive Oil are 3 of my favourite foods

                  To tell you the truth I eat them just about every day

                    I have done a recipe of iced cappuccino smoothie. it is really good and simple
                    just 4 cube ice and 150ml cold milk and one shot Espresso and some syrup if you like.
                    put them together in shaker,and shake hard. it should has a lot of foam and taste really smoothie. ;D

                      Now that sounds like a great summer drink

                      I will try it when summer arrives but I may add some ice cream to the mix

                      A similar drink as yours that is a favourite in our household is the use of Milo instead of coffee

                        Golly, when I was visiting Greece it seemed that foamy Nescafe "Classic" frappes (without milk) were everywhere. Yuck. It was a mission to get a coffee the way I like it.

                          "Nobody told me the water would be wet".

                          Greeks visiting Italy probably complain about all that bloody espresso everywhere and no decent frappes to be found. :
