I only ever use a double basket. one shot goes down as an espresso and the other a latte. The espresso is normally finished before Silvia is up to steaming temp. a longblack with suger shouldnt be too confronting even for someone who only drinks milk drinks. you will still be able to pick out varietal differences. However if you prepare it poorly you will know. 8-)
