    Hi Snobs!

    So Im really looking forward to trying more of the SOs out there. But Im not sure where to start - other than alphabetically! Im currently working my way though 5kg of PNG Wahgi which I absolutely love - some of the best coffee Ive ever had. I also bought 2.5kg of Guatamela Huehuetenango in a recent beanbay. Dont get me wrong, the GH is nice, but there is something in the taste that doesnt appeal to me. Ive tried it at different roast levels, and nothing has really stood out. I enjoy the Wahgi at quite a light roast - based on Andys notes:

    Bright and acidic at CS8, Sweet at CS9, full of cocoa at CS10.
    Maybe I like an acidic coffee? Im not the best at describing what I am tasting in the coffee - unfortunately...

    Although, the GH is described as acidic also:
    Bright and lively granny smith type acidity at a high CS8 roast depth which softens as you take it darker into CS9. Mid bodied espresso shots that really cut through the taller milk drinks with dry, clean finish.
    My question is, does anyone have any suggestions to SOs to try next?

    Hi David,

    From what you have said above sounds likw what i had been thinking when i first started roasting. Where do i start? Like many coffee related subjects on here i feel it come down to preference .I found working out what tastes and aromas i liked and putting that against the descriptions in the buying area and trying some that seem appealing.

    There are alot of people on here with heaps of knowlage who may have a better way of going about it. but at the end of the day what appeals to you or what you are willing to try is what it comes down too.


    About the Guatamela Huehuetenango, this seems to be a popular bean for many people. I too found it different however what i really liked about it was its clean feeling in the mouth.

      I have had wonderful SOs from every continent, so my advice for you is to not be to picky about where to start. A recent pick up of mine was from Panama (not the first place thought about when talking coffee) and it was wonderful, one of the smoothest coffees I have had, and a complete surprise. On the other hand, I have tried Yemen beans that came highly recommended (and expensive) and while the quality is obvious, the taste just isnt my preferred flavour.
      I am with you on the Wahgi though, what a fabulous bean.

      So just try your luck, if the amount you have to buy to try is too much, maybe ask around for someone local to you who would be willing to split half a bag with you.

        If you havent yet picked up a "sample pack" from the Bean Bay then Id recommend that.

        Next step would be (for me) to pick some coffees that are *very different* in their descriptions. So, for instance: after the mild and acidic ones you have, go for a Ethiopian or Yemeni, or one of the earthy Sumatra or Sulawesi beans. My all time favourite is Sidamo, and it is currently available.

          Also try roasting it using different temperature profiles. Same beans will yield different results

            Hi David,
            A hundred people and as many recommendations.

            Like you I found the Guatamela (from another source)not to my taste....bit too bright.

            Ethiopians well roasted are generally sweeter, and a contrast to the G. I enjoyed Ethiopian Gambella and you may possibly find these beans well worth a try.

            A post roast blend of Ethiopian (majority) and Guatamela might also be to your taste ???

              Well. I had 250g of Ethiopian Ghimbi left over from the starter pack. Considering I roast in 500g. I whacked 250g of Ghimbi and Huehue in the coretto. Roasted it way too light I think, it has hardly any flavour... I spose I could try and rest it for a few more days...

                Others might chime in here to help but Ive found the Guatamela is better at a darker roast, 30 secs into 2nd crack....even a little more.

                Ive not roasted two beans together so cant comment.
                When I blend, its after roasting two beans seperately.

                Hope you can get it right.

                  Ive tried it at a variety of levels. I agree that the huehue is better dark. But still not my cup of tea coffee. But Ive found someone who likes the huehue and is taking what I have left off my hands. So Im investing in some more SOs. Peru Ceja de silva and sulawesi blue are currently at the top of my list. Plus some more of my trusty wahgi i think.

                      India Monsoon Malabar Gold is beautiful! It went into rolling second crack after I hit cool. Oils oozing out if it after 2 weeks rest. Beautiful coffee. I didnt mind the ethiopian yirgacheffe either.
