    How is Instant Coffee Created

    I Know I Know, I really shouldent be asking this Question or even be thinking about this, if I am a Coffee Snob, but I do have good reasons. As I was pondering over this issue for the afternoon, only because before that a customer had asked me for some, freshly ground decaf coffee that she could just add hot water too, unfortunately I sent her away with a decaf long black, but it made me think, how do they made instant coffee instant?

    Look forward to your replys to my Afternoon Ponders, Im sure there will be plenty more where this one came from.

    From what i have heard the coffee is roasted to just palatable right on 1st crack..if not earlier as most of that bitterness comes from a lenthy brewing time to reduce the liquid out of it.

    The drying process comes via way of freeze drying or spray drying.

    In any case, it doesnt matter what the quality if the starting beans are as they are burnt to hell anyway. Thats why they use the cheapest nastiest crap they can find *>:(

    i know there are different ways to do it. I was reading Uncommon Grounds recently by a Mr Pendergast, and he described one of the earlier methods that had the roasters making "soluable coffee" and spraying the liquid into massive silo type structures and cooling it quickly to make crystals that they would scrape off and market as instant coffee.

    I was intrigued by this subject too, and a while back, set about making some at home.

    There are two main methods:
    a) The coffee is brewed till everything is extracted (the grinds are ashen in colour). The resulting liquid can then be evaporated, or more commonly, sprayed down a silo which is heated (not cooled) to evaporate the moisture. Thats why something like international roast looks like little beads. When you pour hot water over this, it basically reconstitutes the coffee.

    b) Freeze drying is similar in the first stages, however the liquid is super-cooled and the result is basically that frozen water separates from the coffee. Once again, concentrated granules form.

    I remember having instant coffee quite a few years back. Didnt really like it. It was quite a few years after that when i discovered espresso. Now there is no turning back. Once you go espresso you dont go back :D ;)

    All the above answers are wrong. I have done extensive research on this subject over many years and there are many misconceptions and deliberate lies spread by the big companies to guard their secret formulas.
    First step is to collect dried cattle droppings from mainly 3rd world countries using child labour.
    Step 2 is a regular run operated through organised crime to enforced garbage contractors to keep all skip bin pickups from major coffee franchise outlets (Starbucks, Maccas, etc) sepparate and delivered to local sweatshop sorting houses for used grind retrieval.
    Next step involves a reconstituting process followed by autoclaving and then crush and sieving to appropriate granule sizing to respective marketing desires.
    Then ignorant consumers keep the whole process going round and round till they discover the golden elixer which is real coffe and bears absolutely no resemblance to the afformention pile of goats swill.
