    New fresh roasted beans but bitter taste....need advice

    OK, so I have finished yet another bag of coffee and decided on a new type....tried first several shots but too runny...made grounds finer then and I think it looked perfect.....double took around 28 seconds but wife said it tasted a little bitter.....she added 1 sugar and she was happy.

    Ive researched all I can last 24 hours about bitter taste and possible problems......could it be that grounds are now too fine??

    Should I perhaps presoak PF with ground alsready in there for about 30 seconds?

    Could my water temp be too hot?
    Or even too compacted in PF hence over extraction??

    Im using my new Lelit Combi....

    To start right at the very beginning....some beans are more bitter, some more acid, some very mellow. If your grind and tamp are right then maybe it is the natural flavour characteristics of the particular bean. What does it taste like on someone elses machine.
    I do not like bitter much and i hate acid, so I avoid beans with those dominant characteristics.

    Some good points........I have not tried on another machine.....
    I didnt fidn it too bitter but the wife did so I guess its personal taste...I will make it a coarser by one step and see what she says......

    Sure as hell makes this an art I guess and the important thing is it can take a couple of cups before you can get it right.
    For me it also means learn a couple of beans only and stick to them for the time being...

    I found if I try and brew freshly roasted (under an hour since roasted) it tastes bitter sometimes, and some take quite a while to calm down after roasting (up to a week with some beans), could that be the problem?

    I believe they were roasted 10 days ago so this could be it......i do also suspect I grinded to fine though and really tampered to much since the first couple of cups did not give me creama and I turfed 2 cups...

    All good fun I guess..........

    youve answered your own question right there. Were all unique, with different palates. I wouldnt be too worried about it really. Maybe just dont serve your wife that coffee again if she doesnt like it.

    ummm........ill just keep experimenting too i guess and find something we will both enjoy and stick to it for a while..........:)

    What beans are they.....where from(roaster) and do you know the origin(country/region)?

    Hi Bean,

    its part of the journey and the fun of coffee. Currently using St Alis Blend X as an example, generally St Ali roasts are on the lighter end. I had being running it with my Pavoni and over the last couple of days in my new Izzo. Of the two the Pavoni is the more mellow and a sweeter shot, while the Izzo is brighter and more lively, both are very drinkable and tasty but both are distinct and different. Similar shot times and grinds.

    Another blend I have at present is last weeks Veneziano blend of the week. It is smoother on the Izzo and more to my palette than the St Ali. Got a couple of Andys to try over the weekend Espresso WOW and the Faircrack Bean (?? name) plus some Genovese Brazil blend.

    What it means is keep playing and trying lots and even when you find one you like (also try some single origons) use that as your staple brew but keep trying other coffees. Then there is Syphons, Pour Over Drips .... and so many other ways to try the same beans for a different taste again :D

    Wow thanks guys for the feedback......
    The roast was purchased from Quists Eclaire from Quists on Little Collins St and a specialty for Latte and Chinos......

    Sorry, dont know much else other that they were roasted about a week before I got them.........just the smell alone is incredible......

    Really starting to enjoy this whole new experience albeit later in life......:)
