I think you will find that all classes should allow you a group to work on. More 1 group or 1/2 as many 2 group machines = same same to me ::)
We also have some extraordinary competition baristi in David Makin- Makin Espresso and David Seng- The Espresso School. I am sure that each of them will provide a unique experience and they are very capable of taking you well beyond the next level. There are alternatives too.
Other options include The Coffee Academy where I used to teach in a past life and I have even heard of some dude with a shed in Northcote runs courses as well- though not for larger groups.
