    What is a long black ?

    Please excuse my ignorance , but how do you make a long black ? When someone asks for one I sulk off to my machine , pull an exquisite shot of espresso and then ruin it by diluting it with hot water . Is this the way to do it or am I missing something .

    little bit of hot water in the cup first

    then pull the double espresso in to the cup...the crema holds nicely, but you must serve immediately just like an espresso otherwise the crema will die.

    Tulip cups are perfect for long blacks....the smaller diameter of the cup allows the crema to hold more easily as opposed to having to stretch over a larger diameter of another cup

    hmmm prefer a long black from a plunger then from an espresso. try it you may blow them away.

    It depends how you serve it Dailybean.

    If; like the original poster, you pour your hot water over the top of the espresso shot, you will both destroy the crema and burn the coffee. However, if put the hot water in the cup and pour the double shot of espresso over the top of the water (boiling is fine) then it will be fine.

    and plunger coffee is both long and black. My hypothesis. If you are an espresso long black drinker, you will probably also love a plunger brew. IMHO I doubt there would be many people who drink long blacks out, who would invest in an espresso machine to do the same thing. They would probably be very content with a plunger.

    okay but still is not a technical "long black"...sure its a black coffee...but is not made from espresso.

    fill the cup before grinding, dosing, tamping and it will cool off a bit or add a dash of cold water.

    maybe... you never know. i started out content with plunger... but look where i am now ;)

    taste wise id think a long black would be different to plunger brewed coffee. brewing method is different and i think that the plunger method pulls different characteristics (sometimes slight) from coffee grounds. like wushoes said, plunger is not made from espresso...

    point taken I wont name plunger as long black. Just curious though Wushoes if your in the mood for a coffee that is both Long and black which do you prefer? :)

    Also, it just occured to me. If youre pouring the water on top of the espresso shot (and of course, not a double shot) isnt that just an americano?

    Long black = double shot on top of water
    Americano = water on top of single shot (I think?)
    Lungo = a single shot on water, but with modified machine settings so that the extraction takes closer to one minute. (Again, I think?)

    Again, Im not completely sure about the second two, but I know that they arent the same.

    Long Black.

    Best served in tulip cup as suggested by Wushoes.

    Preheat cup, Fill 2/3 full with hot water from hot water spout of machine, pull double espresso on top then serve as quickly as humanly possible before the crema dies.

    Dont use boiling water for the hot water. It destroys the coffee.

    as far as I know Americano is weaker than a long black....(in general all american coffee is piss weak...this one is hear say :P)

    About 50ml of hot water (not boiling) in a mug, then pour the total contents of a 3 cup moka pot in. Works for me.

    Thanks for all replies , I think Ill go with a shot on top of hot water as this seems to make sense . One more question , what is a tulip cup ?

    Dont believe that this is a singularly American prerogative, Ive had plenty of brews from establishments around the country that tried to pass off dishwater as espresso,

    If its served by the cafe at the back of the Bourke St Melbourne skyscraper which houses thousands of employees of the major Australian telecommunciactions company, its bottom to 1 cm from the top of a 220ml cap. cup in 6 seconds last time I looked.... :o

    I prefer the double shot on top of hot water.

    So many places make piss-weak swill and so hot I have to sit there for 5-10 mins before I can drink it (feel like I need to ask for an ice cube).

    PS - If someone tried to pass off plunger as a long black I wouldnt be happy.

    I had a friend over tonight, she drinks long black all the time. So with approx 60 mills of non boiling water I pulled a 60 mill double shot of indian monsooned peaberry on top of it. It produced a great crema which almost lasted the duration of the drink, not only was she very impressed but so was I. It was the longest lasting non milk crema Ive ever seen, I wonder if there is a formula for it. ie. precise water temp or something else... or possibly just the peaberry quality.......

    I am just finishing off my latest roast of that been Ray....and the crema is plentiful and long. I made a long black the other night and it was very good.

    Donít laugh...

    A well respected person in the coffee industry told me that to pour a long black you just coarsen the grind!

    His theory is that a 25 second extraction is what you should aim for regardless of volume so a coarse grind that will fill a cup in 25 seconds will produce as good a coffee as any other method.

    Therefore a ristretto would be a fine grind and a 25 second pull.

    Its an interesting idea that Iím yet to try but not one that would work well in a cafe environment easily unless you changed the tamp to get the same result.
