    Coffee shops - average kgs/wk or shots sold/wk

    Hi all. A post in another thread got me thinking. If you know from your experience, or friends/clients who have coffee shops (not restaurants just straight cafes with at most a very basic short order snack menu) what is a typical weeks coffee consumption in Kg per week or shots sold per week - both in house and take aways. Position of store would be good info too - not specifics if you dont want to to reveal the shop but say for example "Inner Melbourne mall shopping area" and approx size of shop (seating capacity for example).

    I know a local cafe in NZ was only doing 6kg per week in prime location with good seating etc, they have just changed owners and on advice coffee/grinder and had some training so we will see what happens. (heck we drink that much at home ;D)
    The cafe I did my course did 20kg per week.

    One of the cafes on campus at Optus does 60kg a week.

    There are 4 other places on campus to get coffee.

    50kg+ in a brisbane shopping center.

    The coffee sold doesnt matter really though. Well it does but it all depends on the rent and overheads. I know another place in country NSW that does 9kg a week and would make nearly the same money at the end of the day. Living in country NSW is cheaper than brisbane too.

    Why do you want to know (Im just curious why your asking not implying anything)?

    TG - :) (I just didnt know what the campus was for Optus - nice; it has good ads I suppose).

    JimmyB - Mal has got me pegged :). The cogs are turning...albeit slowly.

    95+ kg per week...Cronulla...seating for maybe 15...2x3group Wegas...2 Roburs that get hot! :o

    Oz, my take is that theres a lot of variables as to how many shots each cafe owner will extract per kilo.

    Im mobile, therefore external, and subject to climatic conditions - during windy times, a lot of grind flies away from the pf, so I have a wastage issue. However, I dont pay an absurdly exorbitant rent per sq/m - thats the flip-side.

    I also only use a double pf with 14gm basket both for 8oz & 12 oz, so I use a lot of grind (thats a personal decision, as to ensure optimal quality extractions ;))

    At the end of the day (gotta luv that cliche :D) I average 65-70 cups per kilo, based on the circumstances outlined above.

    If your cogs are turning, as Mal observed ... keep doing your research mate.

    Thanks fellas. Yep I assumed that wastage would be a big factor...I suppose if you were on a machine by yourself you could put though a single basket where an odd customer came in...but you would have to be consistent with is hard with the single. But even with a double and wasting one side of the shot, that a lot of coffees from a Kg - ie 65-70. So if oveheards are kept down and the rate of sale per week is good it can be a good business.

    Dennis.... wow :o how many sq m2 is that? How many Baristas on at a time?

    Ozscott I say go after your dreams but just do all the research involved with it. Im at the same spot as you atm but a bit further and have found several cafes that I got to the stage of considering of or actually have put in a offer for. All of them I was happy with on first impressions wether it was cause of the price or location but found all had major problems.

    Whether it be future developments in the area that would affect traffic flow significantly, hidden overheads (such as all the equipment being leased) or most commonly demolition clauses/leases that wouldnt be renewed they were all deal breakers for me.

    When it comes down to it you have to be extremely careful and ask yourself if its to good to be true...what dont you know.

    Only about 30sqm; one person taking orders + 3 Baristi. They pump them out! ;)
