    Dosing on a new Silvia / Rocky

    Hi,

    my first post here,... so nervous. ;)

    Ive just yesterday bought a Silvia / Rocky (doserless) combo from Cosmorex here in Canberra. I feel I should throw out a general thank you to everyone, I spent a lot of time on here reading peoples opinions and advice.

    This is the first machine Ive owned, but Ive spent the last 5 years or so teaching myself to make a good coffee on an old single group ranchilio comercial machine. Not sure what model it is, but it must be about 15-20 years old. Its currently set up in my parents laundry. We "appropriated" it from a shop my grandfather used to own when the tenants dissapeared owing a lot of rent.

    Anyway, back to the Silvia, Ive been trying to get the grind right, but I dont think Ive quite got it. It doesnt seem to matter what I do, the pucks all seem a bit watery. Theyre not sloppy, but look wet when I take the PF off. Ive found what I think is a good setting (15) on the rocky, and fill the PF as much as I can (any more and I cant get the PF onto the machine. Its tamped firmly. The shot seems to come through OK, timing and volume seems OK, just the pucks are wet, which Im not used to on the old beast.

    Any tips on what I might be doing wrong and/or how to improve things?

    Also, Im not sure what the best way to accurately measure out a dose for a single/double on this would be. Id figured out a good repeatable method for the old ranchilio, but what are some general techniques for a repeatable measurement for this sort of machine/grinder?

    jb,

    Welcome.

    The number on the Rocky can be fairly arbitrary as they all tend to true zero at varying points.
    However, I would say that 15 seems a little high to me.

    Which basket are you using? Single or double?
    If it is the single, please remove it, clean it and put it in the box the machine came in never to be used again. It is more trouble than it is worth.

    If you think the voulme/time looks about right, then I would suggest a finer grind and not trying to get too much in the basket.

    I found a good dose measure for the Silvia was actually the long plastic scoop that came with the machine. It is roughly 7g per scoop and I found that 2 scoops just slightly overfilled each time made for a good starting point.

    Welcome, jb76, dont be nervous - were a friendly lot here. :)

    Wet pucks are either too fine a grind or underdosing - if youre filling the PF as much as you can then it sounds like too fine a grind. This may not need to be a big adjustment - one thing people can do with their new grinder is make huge adjustments each time, this means youre taking a long time to solve what could be a small problem. The way I dose my Silvia is to fill the PF so there is a mound on top, level it off, tap 4 times, refill with another mound, relevel and tamp. If my grind is right then this will have the puck compressed at the level of the circlip (groove) in the basket.

    This is a basic dosing technique. You may wind up adjusting the number of taps, the degree of tamp etc.

    Also, toss the single basket, its useless. You may want to buy a deeper double basket as well. And practice - Silvia can be a temperamental machine, the key is to do everything the same way, every time. :)

    Hi James,

    Welcome to CoffeeSnobs, and congratulations on the new equipment. As you are finding, every piece of equipment is slightly different, so some trial and error is necessary to get up to speed again whenever you change anything.

    When you say the puck is wet--do you mean wet and sloppy, or just wet on top?

    Every measurement (except by your taste buds!) is for guidance only. If you are getting good results, that is what really counts. An approximation of time/measurement is around 50ml in 30 seconds.

    The usual recommendation here is to concentrate on the double basket and get that right. The single is much fussier to use. Then either drink doubles, store or sink the excess, or shorten the pull and have a ristretto. *:)

    Generally the best dose is to be able to lock in the portafilter and have the tamped coffee just clear the screen. Take it back out and check--you may see just the impression of the screw head in the puck. Too small a dose and the puck will be sloppy, too much and the pressure of putting in the portafilter is likely to crack the puck and cause channeling and reduce the quality of extraction.

    Thanks for the help guys,

    re: the comments on the single filter - cosmorex gave the same advice, told me to use the supplied double as a single, and they threw in a commercial double as well.

    and the puck looks wet on top only, its not sloppy.

    Ill try out a few of the suggestions and see how they go. Guess Id better go have a coffee now....

    I found this thread interesting. I have been learning to use my new Diadema /Rocky combo and whilst very happy with the coffee quality, I had noted that the pucks were wet (not sloppy) on top upon removal of the portafilter. They knock out just fine, but like you I was not expecting them to be wet on top as it is usually a few minutes since the pour. I have settled on an 11 grind on Rocky but I will try a 12/13 to see whether anything changes. I find grinds of 15 & above produce different pours and less satisfactory coffee although my plunger likes about 18-20.

    Ive got Silvia / Rocky also. I know as everyone says the grind numbers dont mean much, but I generally stay in the range of 8 - 11 depending on the beans.

    Ive found that with each different bean I need to adjust the grinder 1 or 2 notches to get consistent results

    Ditto for my Diadema/Macap combo. However, since the coffee tastes divine, Im not overly concerned about the moisture on top of the puck ;)

    On a general note, why do so many here seem to have a fatwah against the single basket? Im getting great shots from both my single and double baskets. It took me a little while to figure-out that the single requires a slightly courser grind and since then, Ive hardly had a dud shot from either basket.

    Well get someone to send you the Silvia single basket and see how you go!

    Its not a good one to use. Other singles are likely to be better because they really could not be worse.
