    New café in Collingwood?

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
Does anyone have any info about a new café/coffee vendor about to open on the corner of Oxford and Stanley Streets in Collingwood? *

I had a peak in the window over the weekend and it looks like it will be a serious coffee place. *

As well as having a roaster in there on display, on the bench were 3 Syphons, a Clover and a massively long espresso machine.

I believe it opened today. I was considering taking a drive over to check it out. He has the only 6 group synesso in the world. The middle steam wand is operated via a foot lever.

My guess is that its not all about volume. It allows them to have 2 or three groups dialed in for the house blend and then dial in 3 or 4 s/os /guest blends

I can understand 6 groups in total. just not on 1 machine.

Good on them tho. I enjoy seeing people live their dream.

Well if it has been done for marketing it has worked, it makes the place stand out from the crowd and gets people talking. Now they just have to make the machine sing and the business is a success.

...hooley-dooley! Great fit out (and great photos- thanks aramsay), no $ spared here!
    That machine is...simply stunning.
Can someone tell me what the shop roaster is?

Hard to look at those photos without a great sense of envy! I cant help wondering about the cost of such a great setup.

Just strolled over the road for my first visit. *Very nice. *They have a large range of single origins available for syphon/clover. *I just had a house blend espresso. Going to be a struggle with temptation being able to look out the window and see this place beckoning.

Its a Giesen. *Dont think they are roasting just yet though.

The fit out is great. I particularly like the group handle door handles on the inside of the front door. Hard to believe that space has been boarded up and unused for the past 8 years Ive lived in Oxford St. *Obviously just needed someone with some vision to see the potential.

Popped by today. Ive previously never been to Liar Liar I was intrigued by Nolans presentation of Clover coffee in the conqac glasses. It really brought the whole experience of coffee to the forefront from the aroma aided by the glass design, to the way the coffee changes as it cools. Amazing.

They served siphon coffee in the same. I was there yesterday too! Was tempted to give a Clover a go as well, but I was getting close to over indulging.....Id been to Foxy Brown in Northcote just before so I was already on #5 or #6 coffees for the day :D

    Re: New café in Collingwood?

Went for breakfast yesterday with my parents. Whilst I like the concept, the service sucked, the food was slow and suprisingly the coffee was slow (considering they have a huge machine) and staggered quite drastically.

We ordered 2 espressos and a cappucino. First out was 1 espresso, 5minutes later the cap, then another 10minutes for the last espresso. The coffee did taste good though.

A lady next to us had been waiting for 20minutes just for toast with no apology for the delay. She was ingored when trying to get someones attention for another coffee. She lived upstairs and I doubt she will be a regular.

I am sure its opening month jitters (but its no excuse), still they will probably always be busy regardless, because like Liar Liar they are situated at the bottom of apartments, I dont think I will return til maybe the new year even though I do live quite close.

    Re: New café in Collingwood?

I went on Saturday, and while a friend had mentioned the food was less than spectacular, I couldnt fault the place.

My wife is a bit of an interior design fanatic, so we both got a kick out of the attention to detail theyve put in to the place.

The food was really good. I had Marys eggs or something similarly named. Basically scrambled eggs, chorizo sausage with a concentration of diced capsicum and tomatoes on top. Awesome.

Coffees. Well, my wife had a cappuccino which she rated quite highly (though she said mine was better *wink*), I had a guatemalan Finca Las Nubes syphon which was also to the high expectation I have from a place of this calibre.

All in all, an ejoyable experience. If I had to pick fault with one aspect, it was slightly slower on the food than I would have hoped, but having a 3yo kicking around getting bored always makes time go slower than normal.

If I didnt live on the other side of town, this would be a semi regularly venue for me.

To be honest, coffee was very good and the food was nice too, just the service wasnt as expected / anticipated.

It is definitely a very well designed space and you can see the care that has gone into it.

    Re: New café in Collingwood?

Cofffee was EXCELLENT... had a latte followed by a single origin ristretto..
Barista had to personally deliver the ristretto before it got cold!

Food was good as well! I had the scrambled eggs with chorizo..
Unfortunately.. service was a tad bad..

We came in and ask to put our name down on a waiting list but they did not have one. My friends and I were waiting for a seat and were bypassed by others who came later.. So we waited for 20 minutes and the same waitress that we ask to put our name down 20 minutes ago asked us whether we have been attended to yet.. We finally spotted an empty table.. but had to personally tell the waitress that the seat is empty for them to clean up the table and seat us... Was quite embarrassed because i recommended the place to my friends..

Again, coffee was amazing! Next time i will just go there for the coffee!

I have found that new openings are like the release of new model cars, there are always teething problems that have to be fixed as they occur. Good businesses do this as they happen.

I would hate for someone to rate my cafe based upon the first four weeks after opening but apparently The Age did just that and are about to publish a review based upon those findings - when now four weeks later we are a very different establishment! Good luck to the guys at Proud Mary - the first few weeks of any new joint are hard core but hopefully its smooth sailing after that!

Had breakfast yesterday and the food and coffee were both great.

They now have table service operating. *It was early and so not yet busy but everything went smoothly and the food orders were arriving very quickly so problems seem to be being ironed out.
