    Change in Coffee Tastes

    Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    Think am losing my taste buds or missing something.....i popped over to the Veneziano Caffe at the weekend - picked up a cheeky Peru Ristretto and a bag of Ethopian to GO, the other half had the normal skinny Cap Ethopian SO.

    I took the beans home and thought I would have another taste..correct grind, 6 - 7 second start and nice crema - had a ristretto latte small glass. Starnge thing tasted nothing like the skinny cap, wasnt as Caramel tasting - I know the choc powder would of done something, but I didnt get any of that, just smooth coffee. I tried straight Ristretto, strong, sweet but not the taste I was searching for.

    So is this a weather thing with beans and cold ?,or the preparation. Was using a Tea and Mazzer Grinder....found that similar on a few SO...getting my own roaster soon so gonna be confused galore....

    I think ya nailed it in teh first line but may have dropped a few more issues... Was ya bag of beans from the same batch, that those behind the counter were using.. Dont assume. :-X

    Maybe yours need to age a bit more OR are already a bit older ?

    Who was pulling teh shots... Strange but side by side two different people can deliver different shots.. We have done it on a few occasions.... I know my preferred shot pullers 8-)

    Home roasting... Ya ya will understand how it all changes yet again... Welcome to teh real world.

    Hmm makes sense ....assumed (wrongly) cant confirm that it was the same batch....will let them sit for a while see how I go - if not I guess they were older than I thought...

    Oh coffee cant wait for my own roasting...NOT I had a laugh

    And if you dont use the same equipment, and same milk as Veneziano then there will always be a difference. ;)

    At present my taste buds are lost... No tar or smoke or other crap... They are lost and some must have decided to take a break or just loose it.

    For me... The first sip of a coffee always has the more intense and sharp flavours..

    After that they tend to mellow and mellow quickly.

    Thus ask me at the start and by the time I have finished... You will get another verdict. The change in taste is ongoing and depending on the bean can be quite dramatic in a short amount of time..

    Must try water between each sip and see what that does.

    50gm baskets and a 20k coffee machine also have a lot to answer for!

    Interesting comments about palate issues & variation from pour to pour. I get fairly consistent pours but do think that the temperature variation from one to the other accounts for any difference - at least on my machine.
    I do not get the full flavour impact on the first sip, and put that down to the crema and the initial impact of a fairly strong flavour on the fresh tastebuds. By the second or third sip I am getting the full flavour impact. I also find that something sweet - cake/slice/chocolate enjoyed with the coffee, provides a contrast that helps me to get a better fix on the flavour of the shot. I generally drink blacks without sugar so dont have the distraction of the milk & sugar to cope with.
