    Coffee grounds re used ?

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
I was wanting your opinion on something that
Happened thus morning at a cafe. The guy behind the coffee machine was making my coffee whilst the shot was poring him decide to do some spring cleaning and grab a brush to wipe up the coffee grinds that where on the bench then proceeded to wipe them in to his hand then back into the chamber of the grinder. Is there anything wrong with this or am I just thinking to much of it?

My opinion is that this would be just like having a chef scrape off the leftovers on someone elses plate onto your own.

If you werent having a long black or espresso, he should have been steaming the milk, not cleaning the bench.

Its bad practice, I dont like it, I wouldnt go back, and I doubt its isolated to this example!

    Yeah, thats not so good.
Instant turn off for me, and "grounds" to refuse the coffee & get refund.
Personally not a fan of having brewed skin particles in my coffee... (Insert vomit icon).

:o Unbelievable. If Id seen that, I would have walked.

Ive never had anyone do this in front me. I have seen them get a large jug, steam it, pour into a cup, resteam it, pour into next customer cup, then pour the leftover foam back into the "cold" milk bottle though for reuse later....

Id absolutely look for another café. I assume the grounds went back into the doser.. and the doser was already full of ground coffee.

    Stale.

And the stuff swept up off the counter would be even staler. (That is both a science observation - the particles are spread out, hence greater oxygen availability - and a "geeze - time to clean this mess up" observation.) Yucko.

Probably the same as what they say to a couple of local "cafes" who have crud all over the steam wands and a couple of kg of ground coffee under their machines, or leave a bain marie tub full of margarine on the counter with a knife sticking out of it overnight to feed the cockies....nothing.

The place I worked at for a few weeks did this.
I wondered why a spoon kept appearing in the grinds catcher after Id thrown it in the sink.

The boss was reusing the grinds from the catcher; at least i never caught him doing what you described. ::)

P.S. The place is now closed; there were many reasons why I knew the business would fail; stale coffee was but one.

So very wrong for the few cents saved not to mention the safe food handling issues :P

I have seen catch trays emptied back into normally full dosers at least that is slightly better food handling but i still wouldnt drink a coffee at those places ;)

One of my Pet hates re steamed milk so I wont rant >:(

    Yep!

I would also drop back in and tell the owner, they need to know so they can train their staff better.

The owner will probably be proud that their staff were being so frugal.....

I observed exactly this while waiting in line at a Bakery in Malaney. I just put the bread back and walked. Chris point is exactly right: "God knows what happens out the back." I like to think that as CoffeeSnobs we notice the little things (not that this example is little) that better arm us as consumers. Now I can justify that bench bling as a shining example of how much better/safer consumers we we have become... to she who decides on such purchases. She may rarely drink the coffee but she reaps the un-bischmirched bakery rewards. Is too long a bow to draw? Nice pick up Coffeestreet. No doubt youll be walking down a different one!

Totally agree Andy. Get the owner/managers response and then take it further (health dept.) if you think it was not a positive one. Most decent businesses will take on customer feedback.

This is almost as bad as when I used to frequent a well known coffee franchise, until I saw the staff put the takeaway cups for filling on the machine with their fingers in the cup! Followed by the barista? removing them the same way! After asking for a cup without the fingers please, got the "blank look", no apology resulting in it being my last coffee from there.* >:(

Dont let complacency override "healthy" decisions.

Well giving the owner feedback is one thing. Taking it to the Health dept is another. Is this breaching any food or beverage prep regulations? If so, then report them but from what Den reported, doesnt sound like it would get any action.

It isnt exactly going to pose a risk to my health - my taste buds or CoffeeSnob sensibility perhaps.

If I saw a barista do that, I would simply vote with my feet.

If I was bothered enough, I would walk over and say "I saw what you did with those left-over coffee grinds. Please cancel my order/give me my money back".

Yes, its a bit of a popular myth that you arent allowed to handle food with bare hands.

Re: Coffee grounds re used ?

I had an interesting experience at an old and rather famous Italian coffee shop on Bourke Street in Melbourne. I went in one cold day and asked for a strong latte with an extra shot to kick start my day. The gentleman behind the counter proceeds to make my coffee filling and then pouring a double shot into my takeaway cup. He was about to get the milk going when he remebered that I had asked for an extra shot so he picks up one of the pre-used group handles off of the counter (could have been the one he had just poured my shot from or possibly from someone elses coffee as there a few laying around) and he then hooked the handle with its cold already used sodden puck omuck back up to the machine and pours yet another shot into my cup... and then tops it up with milk. I was too dumbfounded to say a word.

I actually had the same experience in Sydney once. Went to a coffee shop, my friend ordered a coffee.. I ordered a coffee... he got a fresh shot.. they tried pouring my shot from his pre-used puck...

Sounds like a friend of mine (doesnt drink coffe) but was horrified that you only get one drink out of a shot. "surely you can use it again like a tea bag" needless to say I dont have tea or coffee at his place and as we are generally there for dinner, I stick to alcohol ;D

Yes some practices are pretty bad, there would be no way I would scrape anything from the bench and put it back in my grinder at work....

I am very meticulous when it comes to cleaning and keeping my work area clean including regular back flushing with water and cleaning of portafilters .....not too clean though you always want them seasoned a little with the coffee oils.

I hate seeing the coffee machine cloths being used for everything ,I have a brown chux for the bench and a blue one for the steam nozzle... if it were picked up and used for something else it would go in the bin and a new one torn from the roll, then the grinder hopper is kept clean daily.....nothing worse than seeing a filthy hopper, just this will make me not buy coffee alone.

Steam nozzles tips are removed daily and cleaned even though they are sparkling at the end of the day anyway...... and the list goes on

If only people cared...... We would all be finding alot more good coffee than bad, unfortunately it is the other way round. :(

The only way we reuse ground coffee is as fertiliser for the garden :)

If im at work, it goes straight into the knockbox.
At home, into the knockbox and into the compost bin. Makes great compost.

As a worker in the hospitality industry, i would tell them straight up what i saw them do.
    Stale coffee is one thing.
Unhygienic coffee is another thing altogether.
They have to be informed for the sake not just for us, but for others too.

If they have a problem with that, then we are entitled to report it to the health department as a food handling subject.

Regardless of the outcome, it would be very difficult for anyone to return back there once that happens.

I admit I do this at home sometimes, but when youre paying for a cup... then no way is it acceptable IMO!
