    Shot life

    I was talking with the guys at Costa Noosa and they say

    without milk the shot goes off pretty quickly, like in seconds exposed to the air. they say better to have the milk wait for the shot then having the shot wait for the milk.

    If so how do people drink short blacks?

    I thought I was too demanding and perfectionistic until I read this!
    I hope I never get to the stage where I am worrying about this stuff.

    So if I let my shot cool a little give it a swirl and then taste its off?

    might as well stick my mouth under the group while I pull a shot from now on haha.

    If you have your milk ready and then pull a shot by the time the shots done the milk has started to separate if not constantly swirled around, even on my single boiler silvia where I had to wait for steam I could not taste the difference once milk is added.

    I think you have about 2 min. max before it goes off.

    I wonder how the Italians sit all day sipping one short black?

    I do the milk first and keep it moving, sometime I use 2 warm jugs and transfer it to stop the separation and work on the shot as fast as I can.

    In my experience, the Italians dont exactly sip their espresso. Id describe it more closely as inhalation. "Going for coffee" isnt the social act of sitting and talking for half an hour like we know it.

    I drink macchiatos and I dont give them time to go off.

    I would have thought its more of a presentation thing, if the crema subsides too much it wont look as impressive milk or not.

    Often I sip my espresso slowly over a few minutes when Im taking the time to savor it, definately dont notice any loss of flavor.

    I heat my milk as I am pouring the shot. Normally both are ready to go within seconds of each other. Love HX machines.
