    Merlo coffee

    Hi all, I've just became confused. After reading and watching a lot of videos on the web on extracting the perfect espresso. I know that there are a lot of variables to the perfect extraction but the most of what I've seen and read is, group head (7-9gm) 30ml pour in 25-30 sec and the grind to be tampered down to 15kg (approx).

    We had a merlo rep come out and said "not with their coffee"!! They grind their coffee more course and don't even pack it down, they just level it off and very lightly push it down NO TAMPERING. Now the pour came out great but it only took 10-12 sec and even though the crema was amazing this just goes against everything I've seen and read.

    So we were doing the 30ml to 25-30sec rule and producing what i thought and tasted was really good coffee and a good crema on top, and had no complaints.
    Now i've been doing the merlo way and have been told it tastes a little week. So does the 25-30sec rule really count to get the full extracted flavor out of a coffee or should we keep doing what was showen buy the Merlo Rep for the Merlo coffee?

    Would the 30ml 12-15sec pour on the Merlo coffee extract the full flavor of the coffee?

    Please help.

    Go with your taste buds! The 12-15sec pour would be under-extracted: some people might like it that way, but you are missing out of what the coffee can offer with a good pour.

    The rep has his head so far up his nether regions he's spewing the BS it's surrounded by. Do it the way you were adjusting as needed to accommodate different coffees and environmental conditions..

    FYI just because I cringe every time I see it. The TAMPER is the name of the tool with which you TAMP.

    Likely he was trying to get you to use a double basket for a single shot coffee... to make you go through it quicker.

    Thanks for your replys, and sorry for the noobish terms. So I think I'll go back to what i've learnt before the rep came out, as what she showed us didnt seem right I'll stick to the 30ml in 25-30 sec rule. . At least we got a free 1kg bag of beans and a new 9gm basket out of the rep.

    My recommendations, start drinking espresso. Go to reputable cafes and start drinking espresso, learn what espresso ought to taste like, start drinking your own espresso, make an adjustment and taste it. What tastes better? Follow your senses. It's the only real way to learn.

    Both ways tasted good to me and the shots looked like the way Guinness does in a glass , nice head and a wall of beer cascading down the side for a while.

    This seems to be a good place to mention that I've never had a good coffee made with Merlo beans... I would not be listening to a Merlo rep....

    Sound as if the rep didnt know his facts too well.
    Even the Merlo web site gives pretty conventional instructions for espresso..
    • Coffee should be ground specifically for your espresso machine. Let one of our Merlo Coffee experts know the make of your machine to receive the correct grind for your machine.
    • Fill the filter basket with coffee to the top and tamp lightly with a slight twist to ensure coffee is level
    • Fit the group handle into place and start the water
    • Your coffee should pour out of the handle like warm honey.
    • If it is pouring out quickly it will taste sour. To remedy this, have coffee ground finer.
    • Alternatively, if coffee is pouring out slowly or is dripping through, it will taste bitter and burnt. To remedy this, have coffee ground more coarsely.

    When I lived in Brisbane I regularly went to the Di Bella roastery in Bowen Hills to get beans fresh. Veneziano in West End and Campos in the Valley are also really high quality.

    My favorite beans that I found just before leaving Brisbane was Cleanskin Coffee Company on the Northside in Brendale. If can't get out that far LTD espresso bar in the Valley use them and produce fantastic coffee.

    I will put my hand up to defend Merlo. I went to the same shops and agree with the above comments. The Merlo Paddington store was about 250m from my office hence I went there often. I like their coffee and regularly buy roasted beans from them delivered to Adelaide. The last batch I bought was delivered within 12 hours of ordering and was roasted the day of ordering. I am very surprised at the advice given as I have observed their staff often and they certainly don't do what the rep suggested. I would suggest he is rouge and not towing the Merlo line. I would put them level with Campos and slightly ahead of Veneziano and Di Bella.

    Use the beans as normal and ignore the Rep.

    Your Merlo rep should be sacked. His head is up his arse and he knows f-all about the product he's selling and giving the company he represents a very bad reputation.

    ring their office in bowen hills and complain, tell them if they send him around again you'll buy from the competition.

    I've been using Merlo beans for over 10 years and never heard shite like this from a rep. he should be crucified.

    One of my favourite local cafes uses Merlo and I have had hundreds of cups on the premises and used to use their bean at home before I discovered Coffee Snobs.
    It is pretty good bean and I made some good coffee with it but it is not in the Coffee Snobs class.
    One wonders where your 'Rep' would have got his 'advice' from. Do they just make it up or do they misunderstand what they have been told.

    Hi Craig,

    It sounds like the Merlo representative was wrong. Even with Merlo coffee using their extraction method (which you've aptly described), the extraction length should be somewhere between 20-30 seconds with the dosage that you're using. 12-15 seconds is incorrect, and also inconsistent with the 'Merlo way'.
    I know this from previously working at one of their roasting houses for a number of years, however there's also a video they've published demonstrating it: Fresh espresso beans = a perfect shot - YouTube

    I completely agree with Muppet_Man as well; taste is of paramount importance when dealing with coffee, and similarly when experimenting with different methods
