Before my accident I would;
- roast my green beans in a bread-maker with a heat gun
- make espresso with my Rancilio Rocky/PIDed Silvia
I would make absolutely delicious shots using the beans from Yemen.
I would never add sugar.
Now, my Dad goes through this process but always complains that he must add sugar, even when he uses the beans from Yemen.
He wants to ask if there are other beans he should try.
Appreciate your help.
Not enough information, can you please describe what your father is doing? Walk us through his process because he must be doing something different to ruin a Yemen espresso.
If everything is exactly the same then I suspect that he is over extracting the shot and pouring the bitter ends into the cup rather than stopping when it blondes. Another could be he is not grinding fine enough...
But lets get some more info and see what the more experienced members have to say.

When you made it .....you didn't want sugar. No problem, your palates are different.

Reading between the lines it sounds like your unfortunate accident is part of the dynamic but there seems to be some gaps in the info
you have provided.

What sort of nick is the grinder in? Is it the same grinder that you used to use, and is now getting a little tired?
