Where/how to hire "GUN" baristas??
Looking to setup a small cafe around the Melbourne CBD area, hopefully in the second half of this year. Albeit small, we want to be very very serious about our coffee. An essential part of this, I believe is having a great barista.
I am wondering if people here have any tips on where would be the best place to recruit the gun baristas? Is it sufficient to advertise the role on typical job sites (e.g. Seek)? Or are there any other special tricks / other specific places that are more likely to hit the target audience?
What key factors do you think would be important for cafes to be able to attract such talents?
Salary obviously needs to be 'competitive'. What does 'competitive' salary really mean in the world of great baristas (i.e. how much is the typical salary range)?

coffeejobs.com.au Salary? There are a few sought after people in town but they are aligned with particular brands with particularly deep pockets.
A newbie won't attract one. You would be better off paying a top barista to train your own staff and concentrate on establishing a quality brand with good staff that know how to make your customers feel good and want to return.
Equipment that you provide will signal how serious and informed you are and you should purchase your own grinders and machine, this will give you full control over the coffee served at your café. Have you selected a roaster yet? A good roaster should be an invaluable resource rather than someone who wants to plaster their own branding all over your shop and then leave you to figure it out for yourself. The café fit out must be hip and cool or nearly everyone will stay away, that's just how it is.
