    I think I prefer under-extracted shots

    I have a pretty basic set up. EM7K and Rocky. I grind into a jar and shake to remove clumps. 22-26g into a 22g Pesado basket aiming for 2:1. Pesado tamper. Sample Pacemaker beans usually.
    I find I prefer shots that pull in 17-19s (I don't include the pre-infusion in the timing) to shots that pull in around 30s. They seem to have less bitterness and more sweetness and complexity.

    I accept that everything here is probably too imprecise to be able judge much, but is it possible that I prefer under-extracted shots? Or is something else more likely?

    Most recipes include any preinfusion time, so depending on your preinfusion, your 30sec shot could be way too slow

    Preinfusion usually isn't included as preinfusion, most recipes are based on full pressure from the get go. Given that vibration pumps ramp up to full pressure even without preinfusion typically your total shot time will need to be longer than a rotary pump to achieve a similar shot. If it tastes good run with it!

    If you can't run a 30 second shot with good beans that is tasting good with a 1:2 ratio you might have to look at your grinder. I reckon either blunt burrs on the Rocky or maybe you can't find the sweet spot due to the grind increments being too large.

    Agree with Level3Ninja, don't count your pre-infusion time, age old debate but most commercial machines such as LaMarzocco Linea don't have pre-infusion so roaster recipes will be counting time under full pressure.

    This can be overcome easily with the Rocky Stepless Mod and if the burrs are past their best, then a new set of OEM burrs will have you set for making consistently excellent espresso...
