    Gday tojo1,

    This is in reference to the standard dose of ground coffee which is 7g for Singles and 14g for Doubles. Any dose which is deliberately increased above this is called "Up-Dosing" and visa-versa for "Down-Dosing".....

    I went to a coffee shop and they use 20g baskets as standard.

    hmm....they are more likely updosing into a standard 14g "deep" basket- nominally rated at 16g- and getting more like 20 or 21 g into it....

    I use triple baskets that can fit 24 grams. However we only put 18-19 grams in it. This has made it so easy to train baristi and extraction is amazing. Im not sure if this will work on any machine, however it works well on the synesso. The reason why we dose 18-19 grams is to allow expansion of the puck. Also the expansion doesnt hit the shower screen and effect the flow rate of the extraction. We do use a different triple basket than what i have seen on the market. Most triple baskets extract more from the edge, which makes the espresso spit everywhere. So its down dosing and up dosing combine!!

    I have a triple basket I havent used yet.
    I think Ill give that a go.

    Went went thru so many shower screens last year and the shots were pretty average out of the doubles. Especially in the rush hours and expansion was killing 1 out 15 coffees. Make sure its the triple with the curve bottom, not flat L.M triples i see around. Also its easy to know how much you are dosing, because the tampers are usually level or a little higher than the rim once you have tamped. Extraction is really sweet.
    My 3 year old daughter is dosing with it and she is pulling shots every week. So its very easy to teach people using this method.

    Forgive my apparent ignorance AndyL, but what do you mean by a triple basket?

    Upgrading your dosing volume (basket-wise) from standard 14gm to 16gm (double spout Im talking) will give you a basket almost scraping/aligned with the base of a p.f. Cramming ya grind into that bigger offering will surely reap at best 20gm.

    Whats a triple, & how the hell can ya cram 24gms into it - considering standard pf proportional dimensions???

    GOD my triple basket wont fit in my standard PF.
    It came with my bottomless PF.

    Triple baskets can fit 24 grams, they are a little deeper. There are problems with triples. For example, when you put 24 grams of fresh coffee "lets say 4 days old" you will get massive expansion. At first the extraction will come out good however it will drip around the 16 to 20 second mark. Stopping and starting due to the puck hitting the shower screen around the 16 second mark. What i do is finer grind for the bigger baskets. Also another problem... I cant use the single basket because the grind size doesnt match it. So im going to buy another grinder just for singles!!
    My three year old daughter made coffee with me at the shop last week for customers. The customers loved it. Its really easy to dose this way.
    Watch baristi from all over the world i thought of this dosing method at the cafe from putting everyones techniques together. A bit of stockfeth, Blue bottle, Barista comps, World champs, aussie champs, Kiwis and so many more people.
    Its not about what technique is best or which one is right or wrong. There are 1000s of varibles, in making coffees, so technique will change to match the envirnoment you are in. To polish, to click the side of the portafilter with the tamper or not. Most baristi have an opinion, but they dont understand the real reason for these techniques. When to use them and when not to use them.
    It might not work using a triple basket because of what tools you have. It did take me months to work out how to do it well.
