    Hi,

I read on your web site that you require understanding of espresso and milk texture as a basic condition to participate, what does it actually mean?

Hi Ben- I would have thought it mans that you are competent at milk texture and that you know how to make a satisfactory espresso :-?

    Hi benfish,

Its quite simple really, when youre a child, you need to learn to walk before you can run, same thing with coffee making. A presentable, great flavored Coffee, would rely on certain foundations, comprised from a well extracted espresso that presents well balanced taste and a thick moussy, golden-honey crema on top, together with milk textured to a microfoam texture, in the correct temperature, that is silky, creamy, not too thick nor too thin, with no bubbles, that can break the crema when poured over the espresso, in a manner that can result in a free pour pattern at the end of the pour.

As an intense, short, 3 hours session, Scottie would not attempt to assist you in creating the foundations (thats what our basic workshop with Hazel or our one-on-one training aimed at), but rather pick up from that point of balanced, well extracted espresso and good milk texture, and take you further through demonstration and hands on, towards an understanding of how to achieve a free pour, and even if not actually achieved, to provide you with the tools you can take home and practice with.

    Hope it helps! Ofra

Thanks Ofra, Renzo and Scottie for a great afternoon.

It was very enjoyable AND informative.

Scottie is a latte art FREAK!! (as well as a nice guy 8-)) and did a good job of teaching a good basis for doing latte art. (Its a bit like golf but... I know what I should be doing but need LOTS of practice to get it right... more than 2 or 3 a day :-/).

(And what were those cookies that went very quickly, Ofra? Very yummy!) Your hospitality was much appreciated. All up, well worth the long drive in.

Yeah Id love to echo Gregs sentiments. Its actually my second time around for this course and it was great to get a refresher on the things that I had previously learnt. When this course is on again guys, GET THERE! Its an invaluable part of developing great techniques that youll take into your coffee making experience. Its a bargain at the price it was, and especially as it included the SC dosing tools too! How often do you get the opportunity to be trained with a WORLD Latte Art champ?! Not to forget that the self-proclaimed show pony is a great bloke as well.

    Cheers!

Well its definitely NOT one of mine ;D. (I poured some nice shots, textured some nice milk - how can you not on the new Giotto?- but then it all went downhill :P. I needed another 3 hours practicing pouring).

I dont think Scottie was even looking when he poured that rosetta (I think he was talking to everyone, explaining how he ISNT a show-pony! 8-)). Hes a legend at latte art!

It was an absolute pleasure being involved on Saturday, Ofra. Great company, great fun and a great learning experience.

    Greg

(PS - looking forward to the book coming out!)

:D youre right, its not so bad - I was in Melbourne and had a day that started with Batch Espresso in Balaclava and ended with taking lots of photos of stencils and stickups around the laneways in the city.

Still, as I look at the poor excuse for latte art I poured this morning it just makes me want to do this workshop even more!
