    FREE Cup Of Excellence Cupping Sessions - Brisbane

    Hi to all Brisbane Coffee Snobs!!

    a) I am very excited and honoured that Andy Freeman came to visit me in my roasting room on Friday!!! Very cool!!!

    & b) Every Saturday morning, from 9am - 10am, I am holding Free Cup of Excellence Cupping sessions at the Di Bella Coffee Factory, 82 Abbotsford Rd, Bowen Hills.

    We have the following origins - Colombia
    * * * * * * * * * * * * * * * * * * * * * * *El Salvador
    * * * * * * * * * * * * * * * * * * * * * * *Guatemala
    * * * * * * * * * * * * * * * * * * * * * * *Rwanda
    * * * * * * * * * * * * * * * * * * * * * * *Bolivia

    I keep the groups quite small - 4-6 max. as well. Bookings are advised. To book, you can call 3252 5858.

    I am also doing my sessions from 9am so that if some of you wanted to get over to Veneziano for their session you could make it as well.

    I really look forward to meeting some of you soon!!!

    A big thanks to Mark, David and the lovely Tim Adams for coming to the cupping this morning!!

    We had an awesome session and finished off with some great Sumatra KPB from Gajah Mountain, Aceh, which I think all agreed to be on par if not better than the COE!! *

    So might mix it up a little again next week. Will keep you posted!

    Hi All!

    Have been a bit slack with my updates of offerings for the weekly COE cuppings. *:-[

    Anyway, this week we had COE from Bolivia, Guatemala, Colombia and then we finished with a huge treat of Esmeralda!!!

    For those that are keen to try, I will definitely put some Esmeralda aside for next weeks cupping...

    So if youre keen, let me know and I look forward to meeting more of the Brisbane Coffee Snobs!!!

    More cupping the better I say!

    Free CoE cupping is a rare event, great for the Brissy CSrs (and travelling ones). *You should get there if you can. *

    I only just stumbled onto the thread reading the funny couple of posts above. So now I have moved it into the News section of the website so it doesnt get as buried in the general section.

    Well I dropped in the other day... And all I can say is that the TWO burly Supervisors who were standing still ( But Observing and giving instructions to C8H10N4O2 :o ) must have dropped the ball on the Updating and redesign of the Di Bella web pages.

    Strange.... The way C8H10N4O2 working so hard :( , weighing and moving all those beans :( Have not seen that since returning from OS... ;)

    I assumed the Supervisors would have every thing under control....

    PS. C8H10N4O2 we had a great meeting and got some good stuff down, as well as a coffee or two... Shame you were under the eye and could not come and have a chat... ;D

    All the Es Ive had lately benefits from a long steep.... dont know if thats a roast thing or not, but short steeps havent yielded the goods that this bean has to offer. You get some nice flavours and aromas with the short steep methods, but there are sooo many layers to this little bean that have to be had.

    mmmmmm......Es.

    Website is under reconstruction......... the two big supervisors where there to make changes to the flus on the 60kg roaster.....

    and as for Anne...... she is a senior manager at Di Bella and therefore can do what she likes when she likes....

    very interesting how peoples observations can sometimes be way off track!!!!!! ;)

    Both websites are being redone as previously posted..... however we do not put CoE on website as we use it for marketing purposes... ie free cupping classes... demos etc.. if your interested or cs are interested in purchasing they can by contacting Anne direct.... she is the only one in control of the sale as you all know CoE is in limited supply..... :)

    Thanks for getting back to me; Ill shoot Anne an email, but I think that it would be great if you or Anne could post up the lots that you have on this thread so that we can check the cupping notes online. *I have been absolutely spoilt in the number of CoE cuppings that I have done recently and Im starting to be able to predict the ones that I reckon will be stunners from the notes, so Id love to be able to look them up to see if you have anything that Im particularly interested in. Equally, there are a number of CoE samples with scores that I can understand are above 84, but are not the sort of thing that Id really want to buy.

    The same goes for the Esmeralda. *For anyone that might be reading this thread and might not know, last year Hacienda la Esmeralda had their own auction and divided their Esmeralda up into different lots for it, each of which had different tasting notes. *I checked up on the auction site and it looks like the only Australian buyer was Seven Seeds, so its not obvious to me which lot you guys have bought. *From the last crop, I have had the lots bought by Seven Seeds and Terroir (from memory - might have been from the crop before), so I would be interested in trying any different lots that are available in Australia.

    Interesting that you should mention buying CoE for marketing purposes as opposed to for production sale - Stephen Hurst brought up this very point at the Mercanta cupping last night.

    Apologies for the late notice - but the cupping sessions are now to be a monthly event - the last Saturday of every month - with the next one being on Sat 27th.

    I have done this so as to allow me to get a hold of a range of other Specialty coffees other than COE.

    For the next cupping I will have:

    COE Guatemala - 08
    COE El Salvador - 08
    COE Colombia - 09
    COE - Nicaragua - 09 (if it arrives in time)
    Australian Bundja - 09
    Kurimi, Ethiopian Yirgacheffe
    El Machete, Panama
    + a special guest appearance by The Yemen Bani Ismail
    + anything else I can find!!

    Will bring out some brewing toys to play with as well, in the event we want to drink the rest of whatever we like!!

    Once again apologies for the late notice and I really hope some of the Brissie CSers can make it for a fabulous morning of cupping, starting c.9am!

    Hey Anne,

    Looks like an interesting lineup!

    The Kurimi and Machete are from Intelligentsia, arent they? I had Intelligentsias Kurimi at their Silver Lake store earlier this year and it single-handedly made me do an about-face on iced coffee. If you get a chance, it might be worthwhile doing a toddy type brew of it for the cuppers and serving it over ice; its dee-lish.

    Which COE coffees do you have? Its kind of ironic that people use "COE" as a generic descriptor in the same way that people call something a "Brazil Santos", given that the whole point of the program is to recognise and promote the efforts of individual farmers and to make the point that there is a huge diversity of flavour in the world of coffee. It is almost like a reversion to the commodity coffee mindset that the whole COE program is designed to counter.

    As a paid member of COE, I (and Di Bella coffee) have genuine COE samples - not using it as generic descriptor as you infer.

    I am very passionate about giving people the opportunity to try this coffee that they may never have the opportunity to try...due to availability and expense.

    My goal is to educate people in Brisbane on the genus/ species and now varieties of coffee and have them as passionate and educated about fine/ specialty coffee as they are about fine wines.
    As a result people will be willing to pay for this coffee if and when I do have the opportunity to offer it for sale - and as a result give back to the farmers what they deserve for producing such an exceptional coffee.

    Unfortunately I find your post quite precocious and disappointing from a moderator.

    I hope Andy sees this and responds accordingly.

    I think the issue is one of Emphasis.

    I believe what Luca is alluding to is: *that we as "specialty" coffee purveyors .. should call these coffees by their estate Names not by country of origin.

    The analogy is .. if you were to conduct a wine tasting and say .. we have on offer a Bordeaux *It promotes that region as a whole.

    Instead we say: *we have *a CHATEAU AUSONE, 1er grand cru classe (A), St-Emilion 2005


    You see a CHATEAU AUSONE is a lot more valuable than an ALTER EGO de PALMER 2005 *... Au$1,810 per bottle as opposed to Au$80 a bottle. * BOTH are exceptional wines and the average wine drinker would find it hard to tell apart, as well as to correctly identify each one. (edit: the prices quoted were the En Primeur prices if you had purchased them back in 2006 .. the current going price of the AUSONE is over 4,000 Euros per bottle = thats au$7,000 per 750 ml bottle .. and recommended not to be consumed before 2020 with peak predicted at 2030)

    both are Bordeaux.

    I as a coffee consumer, would rather know the estate name, date of production, lot/bin number etc. *These descriptors are more valuable to me. *The Country (or region is least important)

    The other point is that by just using .. COE Country (or even region) .. it gives the impression that region produces a better standard. *Sorta what Luca has written about what is happening in Ethiopia at the moment and lumping all the producers together according to region. *Imagine if we did that with wine .. ... All Barrosa Valley .. can only be called Barrosa Valley .. No More Labeling individual estates. *No more Hill of Grace, No more Penfolds .. etc etc. **When that occurs, .. the exceptional estates are disadvantaged, while the sub-standard producers benefit.

    Would love to be there, but it wouldnt be worth my jewels to leave the packing to my wife....heading off at sparrows Sunday morning for a week off. Enjoy the morning folks, put me down for the next one Anne. 8-)

    Cheers to Anne Cooper and Di Bella for hosting a great cupping session this morning. It was an enjoyable and educational experience and it was clear that everyone enjoyed themselves.

    Thanks also to the experienced CSers in attendance for sharing their passion/tips with the rest of us - nice to meet some of you at last. Cant wait for the next one!

    I had SOOOOOO much FUN today!!!! *:D ;D :)

    A big thank-you to all that attended.

    We had such a great mix of newbies and experienced cuppers......and ditto, as squirrel said, a big thanks to the experienced CSers - KK, AM, au_d2, Alex.....it was great to have your support and experience and sharing of tips etc..

    We had some really interesting results and discoveries and I think we all learnt something - no matter what level we are at!

    I also think everyone enjoyed putting names to faces and the tangible contact with other CSers beyond the forum was awesome!!

    Also, after today, hopefully we will see some of the new guys on the forum soon too!

    The next cupping is looking like it will be on Saturday 25th July - but will keep you posted.

    A big Thank You to Anne and Di Bella for hosting a fantastic event. *A very educational day and definitely worked in the location - plenty of natural light. It was great to meet and put faces to names of fellow CSers.

    I have to admit that I kind of scratched my head at your response to my post until I saw Marks photos, which, I think, cleared things up for me. So let me start off by saying sorry for the confusion.

    Your post states the country and year of the COE and nothing more. During our conversation in Melbourne, you said that you had bought a few boxes of COE coffee, which I took to mean that you had bought a few boxes of a particular auction lot tendered by a farmer. I presumed that this was what you were cupping and I wanted to know which lots they were.

    From Marks photos, it looks like you have also or instead bought the samples from the particular auctions and this is what you were cupping. Even so, there can be 20 to 40 samples per auction. I presume that you didnt cup all of them and I would be interested to know which ones you picked out.

    Mark interpreted my comments on COE labelling as I intended. COE lots are made up of different lots of different varietals processed by different methods and tendered by different farmers. These coffees taste different and command different prices. This is something that you appreciate:

    My goal is to educate people in Brisbane on the genus/ species and now varieties of coffee and have them as passionate and educated about fine/ specialty coffee as they are about fine wines.
    If you were looking at something like a "Brazil Santos," it might be made up of many such coffees all blended together. My comment was not to imply that the coffees that you were offering were not COE winners. My comment was that referring to Cup of Excellence coffees as "COE Country Year," doesnt give any information about the individual lots. One possible consequence of this is that consumers will think that all "Cup of Excellence" coffees taste the same in the same way that consumers expect all "Brazil Santos" to taste the same. This is a particularly important point when it comes to the COE program because sometimes roasters buy COE coffees that arent as big in the cup as they are in the price tag and it would be terrible for the program if consumers thought that because they didnt like that particular COE coffee, they wont like any others because others will taste the same.

    The answer to my question seems to be that by "COE Country Year" you meant various samples from the COE auction in that country in that year. Being interested in learning about the things that you want to teach, I would still love to know which samples from each of those auctions you selected to demonstrate your points.

    Is interesting how we can debate about the C o E coffee and the winning farms...the interesting thing about C o E coffee is:

    -what goes on to be cupped by the international jury(cuppers) and therefore have a chance to be selected as a C o E winning farm, gets cupped and selected first by the local cuppers!

    with this in mind, I ask the question:
    -What determines the parameters of what local cuppers consider good enough to be a national winner or not?

    1-quality of green beans:
    "Any coffee that is found to have a major defect by jurors during any round, at any stage, and no matter what its past scores, will be disqualified." as per http://www.cupofexcellence.org/WhatisCOE/CompetitionProtocols/CuppingRules/tabid/149/Default.aspx

    2- local cuppers palate, their mindset and perception of the international markets.

    I can just say, that i have tried green beans from farms that didnt make it to the last round or before the international jury that have blown me away as to the reason why they didnt make it?

    and viceversa....

    Beauty is in the eye of the beholder!

    in terms of education, to know that all C o E lots differ from each other due to micro climates and geographical locations within the same country should suffice...

    in terms of Marketing, it is important to know the farm, the altitude, the year of the crop, milling process, etc...

    and both, should work the way to help consumers understand the benefits and attributes of the green coffee and its processes when they are buying/selling green beans...
