    David Makins WBC Preparations

    Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    Hi Everyone,

    In an attempt to better prepare myself for the World Barista Championships, I am going to be doing some cupping sessions and full competition run throughs. Everyone is welcome and the more feedback and pressure applied the better.

    Wednesday 28th May
    3pm-5pm Cupping session Traditional and Espresso

    Saturday 31st May
    11am-12.30pm Cupping session Traditional and Espresso
    1.30pm Full competition run through

    Wednesday 4th June
    3pm-5pm Cupping session Traditional and Espresso

    Saturday 7th June
    11am-12.30pm Cupping session Traditional and Espresso
    1.30pm Full competition run through

    Hi All,

    Just a quick thank you from all of us at Veneziano to everyone who has supported Dave.

    Rest assured that we are keen to give David and Australia the best possible shot at winning the WBC. David will be taking something like 200kg of coffee over to Copenhagen as well as about 120kg of grinders and other equipment. Its a bit ridiculous for a 15 minute performance, but after Davids experience at WBC Berne in 2006 and seeing WBC 2007 in Tokyo, were pretty convinced that getting those few extra points necessary to win requires an order of magnitude more effort. If only it were more easy to predict how well coffee will travel!

    In all seriousness, though, it makes a lot of sense. As with anything else in life, getting that special amazing quality; that last 5% out of the coffee takes 95% of the effort. We all know that there are heaps of variables that come into play and its difficult to tell from here how the coffee will travel or how the water over there will affect it.

    The boys were able to get their blends to taste how they wanted to [i]here[i], but thats no guarantee that thats what theyll taste like there. And, of course, once they get there, its not as if they would have enough time to roast and rest coffee even if they had access to a roaster. So theyre taking a number of different roast profiles and roast dates for each origin. Then theres the air freighted pallet that arrived without much time to cup it from El Salvador, so a whole bunch of that stuff has been roasted as well. If you take into account that it looks like Dave will probably use two blends, thats a helluva lot of coffee required. Once they get there, theyll do some tasting to work out what is tasting best. In all likelihood, I suspect that theyll end up sticking with something pretty close to what they have always been planning, but its good to have a contingency.

    Things didnt go well for Dave in Berne in 2006; he went over time due to being silly enough to take a slow kony and having to hold his signature drink cups on the tray that he didnt realise had the espresso cup insert put on to it. The coffee that he was planning on using was run through his hotels superautomatic when they thought it was a free sample for them and the coffee that he did have to choose from was either great with crema breaking up or so-so with great crema, so he had to blend the two together. Its pretty unsurprising that the team is taking no chances this year!

    Anyhoo, after all of that, I bet that theyll end up just using the stuff that they have earmarked as favourites now ... or maybe even just a bag of estate, which theyre taking, too ;P
