    Not that Im planning on doing a comp this zillenium but check out some of the new and existing rules at:
    http://www.worldbaristachampionship.com/downloads.htm

    * no sugar required
    * no liquids on top of the machine at any time.
    * not required to serve four drinks at once

    I think it was updated on the 15th August 08

    Ive never read them before until lately, pretty interesting some of them.

    Theres a few interesting changes on the score sheets too ... just having a brief look ...

    Sensory Judges Overall impression is worth four times as much now ... the techies dont look for a visually correct espresso base (I guess thatll make the juggling judges and competitor act a bit easier) ...

    And the really interesting bit - shots are to be within three seconds of each other for each beverage category, but its not mandatory for them to be between 20-30 secs. Thats brilliant I reckon. Hmm, off to read up a bit more ...

    Wow ... the instructions for the sensory judges are very explicit - tip demitasse one way, stir three times front to back, take at least two sips etc...

    Love this: "Competitors may override the evaluation criteria by giving the judges specific instructions on how they
    want the espresso evaluated. As long as the instructions are reasonable, the judges should follow all
    instructions given by the competitor".
