I grind for Syphon Brews most mornings with a 43 year old Zass. Dose is around 20g and it takes a bit less to grind than the kettle takes to boil (2-3 minutes?).
As to finer yes it does take longer and I have my doubts as to most hand grinders being up to doing consistant espresso quality grinds.
For Espresso at home I use an electric and at the shop during the day I have a small electric for Syphon brews. Main reason I use the Zass is it saves having to redial the electric back in again.
