Just got my giotto evoluzione this week with a compak K3 touch. It's taken me a bit to get the grind set. I've changed to a different bean and had a BIG improvement. I think the beans I was using first up just weren't something I like. However I am still getting a sharp finish... It's not quite right. I read somewhere about about a "wear in" period for the burs. How long or what quantity of beans can expect to put through before I get a smoother finish. I had a giotto and compak k3 for about four years before losing it in a divorce and I am missing the fine tuned taste I had going with that set up.
