    Swift Grinder

    Im just curious as to what sort of establishments are using these? How good are they. Ie in a busy cafe during rush hour how would they compare to other large grinders?

    Theres one in use at a cafe bar located in Sydney Airport T2 (Virgin/Deathstar terminal). Cant remember the name of the place but it usually has a queue. Not hard since it is opposite such great coffee establishments like Crappy Kreme donuts.

    I think its a good idea. It was in constant use and IIRC had two hoppers. In fact my doppio cap was one of the best Id had from a takeaway establishment in a long time.

    We use one and it has its pros and cons like any other grinder. It really depends on the cafe and how busy it can get. Also there are tricks you can do to make it more effective. Allpress sell these grinders based on ease and speed. They dont really know how to get the most out of them based on information La Marzocca has said.
    Taste is different and flavours arent as sweet. But who can tell when most people drink milk based coffees. At times the swift pulls better shots than the mazzer, especially in the afternoon and when the coffee is a little older. Swift is terrible with fresh coffee between 3-6 days old.
    The biggest positive is, the swift makes life easier for the barista. That could mean the barista can work an extra 2-5 hours without getting stressed out. Large takeaway coffee are awesome with it. Strong lattes not so good because too much crema. With winter coming on i think the swift is going to be a great investment.

    the comments about the ultra fresh coffee, is that due to massive crema? so do you use it in conjunction with other grinders depending on what style of drink your preparing? What kind of things can you do to enhance its performance? all the advertising reflects thats its a very simple machine to use.

    Swifts are interesting. A few places that use them are St Ali and First Pour. Continual tamping while being dosed. The top of the puck isnt as clean as a manual tamp would be...but produces some pretty ok shots

    If the coffee is too fresh i leave it in the dosing chamber for a minute. Of course with the swift you cant do that. So i use another grinder. Baskets!! get the right baskets!!Not the ones they provide you with
