    Why does my coffee taste "smoky"

    Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    Today I did cupping from my coffee, the result came out pretty ok, sweet and good acidity, but its smoky@@" can anyone solve my problem where I might went wrong?

    I used Gene Cafe, my bean was Peru, 19mins process and drop it just about to 2nd crack

    Smoky is often a sign that the chaff is burning. Its not a problem Ive had with my Gene Cafe.

    How long post-roast was the cupping? The coffee flavours keep developing for up to 10-14 days and then start deteriorating. Tasting after a short time can give all sorts of flavours that may or may not be nice.

    Ive not roasted a Peru so I cant tell about that bean in particular, but, for instance, I like Sidamo anywhere from still warm out to 2 weeks, but the Sumatran I roasted last week in only now starting to be nice.
