    Divots - discard them? Also any advice on avoiding them.

    Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    My 2nd corretto roast wasnt as fortunate as my first. I have divots in about 10% of my beans. Should I pick these out? I dont mind the labour if it makes a difference in my cup.

    Also, is it too intense a heat at one point in the roast that causes divoting? I thought I may have stalled the roast at one point between 1st and 2nd crack and in a panic put the heat gun very close. Turns out I hadnt stalled the roast at all and was now left with my mistake of placing the heat gun so close to the bean mass :-[.

    Any tips for a newbie much appreciated.

    I made up for it with my 3rd roast by managing luckily to get almost the exact temperature profile I was aiming for! Beans look and smell amazing. No divots in this lot.

    If you can taste a difference then you might want to pick them out.

    It would be a matter of sampling enough for one shot and making up an equivalent amount of sorted beans.

    Try both samples.

    If you can taste a difference then decide which one you like better and proceed or not from there.

    I thought they are just due to roasting dark, but could be wrong.

    Divots are usually caused by too much heat going into/during 2nd crack.

    My understanding (from reading only) is that divots are caused by heat that is too intense. This causes bits to fly off the beans at second crack and leave a divot.

    From your description it sounds as if your panic probably caused them.

    I get divots on some beans with my Gene Cafe--Ive never been able to tell the difference in taste.

    Ive started raising the heat gradually and reducing the input of the heat after first crack. So far its working on most beans, although some of the Aceh Arabica divotted anyway.
