Green bean storage in hot & humid climates

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
Any FNQ or Darwinian CSers out there that can share their experience & tips in storing green beans in hot & humid climates?

If the generally accepted advice is "in a cool, dark & dry place in a cloth bag" how do you vary this? Would the benefits of vacuum sealing outweigh the penalty in not letting them breathe in a cloth sack?

    Cheers.

Im no expert Epic but lived and worked in various places around Australia above the tropic line and also in and around PNG. Where air-conditioning a small room isnt practical or viable, Id reckon vacuum-sealing "roast size" batches in individual bags would be fine. Some processors actually ship and sell their beans this way so I dont think there is anything wrong with the idea... :)

    All the best,
    Mal.

Thanks very much for your reply Mal, I think thats the way Ill go. I note Sweet Marias do this for the coffees they source from Australa but state they do need a few days recovery post vacuum.

And now....to start modding my vacuum cleaner :D

    Behmor Coffee Roaster
I have lived in FNQ for the last 2 years in Aurukun and this year moved to Weipa. I have always stored my beans in the bottom shelf in the pantry at the back and have never had any issues with my coffee, apart from my wife saying i take up too much space and how much the whole pantry smells like green beans.

I will be very interested in seeing pics of your modded vacuum and hear how it goes for you as i might give it a go also.
