    monsoon malabar help!

    ok so Indian monsoon Malabar!
    monsoon processing was developed to emulate the elements beans would go through on ships when moved from India to Europe. The beans are left in a hut that was basically a thatch roof, exposed to the monsoon elements. the colour, size and characteristics change through this process.
    so... im all good on the theory of monsooning but i would gather that through this process the beans would become quite unpredictable to roast. ie not every bean is going to come through the monsoon process to the same point. so if anyone has any points about how to get a consistent result, a more even roast and the best characteristics from the bean i would appreciate it!

    Based on my few roasts of this one they can jump quickly from first to second crack due to the higher moisture content so slow them down leading into first and watch out for hitting SC to quickly.

    Flavours are big with this one too so not to everyones liking as a SO so even consider them in a blend with a tamer bean. Must try another roast or two myself :)

    Nice and even to roast, I had been finishing them at about 20 seconds past the first snaps of SC BTW.
