    Roasting cocoa beans

    How do you roast cocoa beans then process them *into chocolate?
    I have *a Green Bean roaster in my workplace but have never roasted
    cocoa beans.

    Chocolate alchemy is a great site to begin reading.

    I roast my cocoa beans in my corretto roaster. Steep ramp to begin with, then slowly, slowly up to around 150C ending between 20-26mins so far.

    Processing takes some equipment to do really well. But you can still make something nice without it. Check out the Mmmmmm...chocolate thread under the wishing well section on this site.

    Lever myself! Not sure what a correto roaster is but Ill check it out.

    Just do a search on here! The corretto roaster was an invention by a Coffeesnob named Corretto (user name, not real name :) ). It is simply a domestic bread maker used as bean agitator (not adding heat), and supplying the heat with a heat gun from a hardware store. Hooked up with a thermocouple to a digital thermometer it makes for an amazing coffee roaster. Seriously, do a search on this site for it and have a look at some of the coffeesnobs amazing setups - theres lots of pics of them.
