    When do we decide the start of first and second crack

    I have read roasting tips given as "first crack + 30", "beginning of second crack", "second crack + 15"...etc. But when do we exactly determine the start of the crack. Is it when we hear the first "pop" sound or after the "pops" get more frequent that we begin counting the seconds to follow a given roasting tip?

    Determine the start of first or second when there are consistent cracks heard. This does not mean rapid but rhythmic as opposed to random.

    I would suggest there is no true Right or WRONG..

    Depending on ya system... You may hear the very first ones OR only pick it up when in to a real rolling crack.

    I tend to ignore the odd pop or crack.. *As soon as I start the hear a few and it is clear that the level is increasing... To me that is the start.... *

    I agree... with teh comment below; byt again every one has a different perception of that threshold of when that change starts......

    Now for first crack... *That just means I may need to manage the rate of change to SC...

    Depending on the beans.... SC can be slow to start or kick off quite quickly... Thus as I like most of my beans just at the start of the rolling crack... *I tend to wait so that the crinkling is starting to build... By the time I dump, they are usually into the rolling stage..

    A couple of beans have performed well, if pulled a bit early... ie. Not quite into SC... That then becomes an issue of being consistent and being aware of the times / profile etc..... *However I still rely on my EARS / EYES and Nose...
