how to get better aroma from behmor?

Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    Hi all,

This is my first post but have been reading for ages. *Ive had the Behmor now just under 2 month, roasting 1/4 - 1/2 lb (but in gram equivalents) every week.

Ive read all the posts about the Behmor and have followed the instructions and the tips in this forum but Im still getting a flat aroma. *Have tried mostly P2 B 1/4 and 1/2 lb and P3 and P4 (usually with 75%- 90% of rated weight). *Ive gone through all of the CS sample packs and tried leaving the beans in for the full cooling cycle, through to pulling the basket out as soon as I hit the cooling button (but still leaving the machine to continue cooling). *I feel like Im missing something fundamental. Have read and reread the manual and these and overseas Behmor roasting forums.

Also tried roasting from lighter to darker roasts, but still the aroma is missing. Its lacking from opening the bag, through to the aroma above the cup, and the bland smell from the grounds after emptying the basket.

The flavour is better than the aroma but I believe it can be better. The lighter roasts were a bit sour so have gone darker. Cant say what CS level yet as I havent got my card yet.

    Any ideas?

I find the same thing from my Behmor Great Cuppa ..

I think its just a trait of the machine.
I did find the aroma a bit better by adding an extra fan faced at the open door once in the cooling cycle.

Thanks Caffeine Dealer, Ill give that a try.

I read previously there were concerns about cooling down the inside of the oven too quickly if a fan was directed into the oven, thats why I didnt try that before, but Ill see if that improves the aroma. At this stage Ill give almost anything a try!

Ok what about tips to minimise the "baked" flavour? I didnt quite understand what people meant by that but possibly this is another way to describe the relatively flat taste that Im getting also?

Is it possible to get a Behmor roasted aroma that smells something like what I get when opening a commercial blend such as a Lavazza gold bag (cant remember the actual product name). Its sweet and light, but my Behmor aromas / flavours are dull, sometimes sour, and flat. Or is this a pipedream for the Behmor?

Anyway, have ordered more from Andy so more experimentation is in order!

The "baking" people refer to comes from not cooling quick enough. This causes flat flavours and aromas but to drink it...it would taste ok to most people.

To replicate the aromas of a commercial blend you need to replicate the coffee produced by ther sometimes million dollar drum roasters. Not at all possible with a Behmor.

The more distinct aromas come from aging the coffee also. If your opening the bag every day trying to smell it then its not going to happen.

I would look at trying different profiles and weights...add to that some better cooling and youll see some improvement.

Good luck with it all :)

    P.S. YAY 600 posts :P

I highly recommend making a bean cooler (many designs to be found on here). When you hit the roast level you want - pull out the basket, dump the beans into said cooler and cool in less than one minute.

It really makes a big difference. No more baked beans ;D

Ill second that, its surprising how much difference such an easy to construct and inexpensive device like this can make. ;)

If your looking to buy new bits and pieces you could do worse than Bunnings, they have all you need at reasonable prices. :)

I second this. When I first started roasting I was quite disapointed in the lack of smell but I was opening the bag daily giving it a sniff.... Once i heat sealed the bags with an iron and waited at least a week, I was shocked at the difference.

I third this. Often, with the Gene Cafe, there is very little aroma post roast, so put it away for 5+ days and its fine.
