One thing I forgot to add. In the link to my setup (above) I was trying to figure out why my roast temps were not what i was expecting and Andy mentioned that the temp of the meter itself is subtracted from the temp at the probe (or something like that). It was colder today than other days I have roasted. And although the PNG roast went darker than my last roast, even thought the final temp was pretty close, it was what I was expecting. The Monsoon Malabar on the other hand just went ballistic way before I was expecting.
