    Roast failure, but why??

    Its been raining in Sydney so I did a roast in the back shed. First roast was 600g of PNG Wahgi AA. First crack was 177 C (about 10min), but wasnt really rolling until 188 C (16min), rolling second at 204, pulled it at 209 C (22min). I was told that taking the PNG Wahgi into second crack was good and Im pretty happy with the look of the beans. So Ill find out in a few days. The temps etc were pretty consistent with my last roast of this bean.


    Next I roasted 500g of Monsoon Malabar. I tried to track the same profile that I used last time as I was pretty happy with the results. I was wanting to use the same profile but rest them for 10days before trying as someone recommended this. Anyway, all did not go according to plan. I dont think I really heard a first crack which was a little strange. I hit the first crack button on the roast monitor software at 187 C (about 11min after load). Then there seemed to be more smoke than I was expecting. I was backing off the heat but the temp was getting away from me and then started dropping. Put the heat back on etc etc. Anyway the highest temp I got to was 192C at about 13min in. There was smoke everywhere and I pulled the beans which by that stage were a bit of an oily mess.


    Last time I did the Monsoon Malabar I got rolling second crack at about 193 C at 14min and I pulled them at 196 C. They were really nice. So, Im trying to figure out where it all went bad. Who knows, they may taste OK. But looking at them I doubt it.

    Any ideas/advice?

    One thing I forgot to add. In the link to my setup (above) I was trying to figure out why my roast temps were not what i was expecting and Andy mentioned that the temp of the meter itself is subtracted from the temp at the probe (or something like that). It was colder today than other days I have roasted. And although the PNG roast went darker than my last roast, even thought the final temp was pretty close, it was what I was expecting. The Monsoon Malabar on the other hand just went ballistic way before I was expecting.

    I have no idea what really happenend, but I have had the same runaway with a Monsoon Malabar previously.

    Strangely enough, it has never repeated itself! :D

    Thanks for sharing your experience Greg. Im still mystified what happened, but I did another batch on Sunday afternoon and it went well (although itll be a week before I taste them). I guess a few roast disasters are all part of the learning curve.
