    green beans - when to roast

    We have our own coffee trees and I would like to know how long can I leave the beans green before having to roast

    If they are already processed and ready to roast, the rule of thumb is about 3 years if kept in appropriate conditions.
    If not ready to roast, how are you processing them from cherry to 'bean'?
    Do you have any method to check moisture content?

    Behmor Coffee Roaster
    The beans are picked then the shell taken off, they are put in water to loosen skin around the bean then let to dry in the sun for a few days, I have know way of knowing the moisture content
