What an odd assortment we have this month.
Apart from the return of the Indian monsoon and that stunning Panama (whole crop!) we have also landed a pile of Robusta beans.
We get a lot of queries from CS'rs who wanted some different regional Robusta's to try in their Italian style blends and we managed to collect a wide range of them all cheap and cheerful at $8/kg and fun to have a play with. Hopefully we can keep this collection in stock so people can use them where needed.
As a rule of thumb (on my roaster) I'm dropping these into the cooling tray with 10C-15C higher finishing temperatures. It's tricky to get them dark enough without getting burnt flavours but when you get your temperatures right you will know.
