    NEW USE OF STEAMER(Plz dont flame me)

    Well...there is the rumour that I have heard...and I am dying to try it but since i am still buying my first coffee machine i havent. A very respectable cafe owner told me once in secrecy, that the steamer handle used for frothing milk and making microfoam, had another use.

    He said, that the steamer made the BEST scrambled eggs. He says instead of milk, you have beaten eggs and a little bit of milk and salt and u would froth it (but not the same technique of making microfoam i guess). I just wanted to ask anyone if they have tried it? or if they want to try it and tel us the results. to my knowledge it would not screw up the steam handle any way since none of the egg woudl actually go up and its still equally easy to clean like milk.

    I can verify this. The Silvertop Taxi Cafe in Spencer St, Melbourne used to do it - may still. I went down there some 20 years ago to check it out, so it is an old trick, if not a good one!

    I mentioned my father had done it in his cafe over 40 years ago.

    Then someone decided to try it.

    Dont think it could come anywhere near eggs cooked in a frypan mmmm.
    although I have heard of some hotels (4-5 star not the stingy ones) scrambling over a double boiler.

    A friend of mine heard that as well and decided to try it on a 3 group Vibiemme at a cafe they helped in. End result - they had beaten eggs all over their apron and hair and face and floor... you get the idea. And that was the end of that experiment.

    haha, dunno what happened there?! Maybe needed a bit of help on how to micro-foam instead of froth ;)

    Ive also used the steam wand for making custard. A really simple sig drink that I never used but played around with in my early days was:

    In a jug; 2 eggs, milk, vanilla, sugar. whisk slightly. Now eggs scramble at 86C, so texture the milk to around 80C and you should have some quickly made custard. Strain this through a chiffon or cheese cloth (or even a sift) onto a shot of coffee and around 10-15mls of maple syrup.

    Pancakes and maple syrup coffee. Its actually pretty good. :)

    Ive seen the egg thing done a few times. I also worked for a while in a cafe where the chef would make the gravy mix up on the steam wand, made in the storage pot - no pan to clean and lumpfree gravy.

    A friend of mines cafe have a nuovo siminelli aurelia which has an auto cut off steam wand that stops steaming at whatever temp you tell it to. They use it for heating soup.

    Ive seen it done at a cafe in Perth and at first neither myself or my mate (who ordered the eggs) could believe our eyes.

    The eggs were awesome though and very quick.

    Ive never tried it myself though. Maybe its about time I did :)

    Id worry about all that egg and gravy etc either being sucked up into the boiler, or just getting baked onto the inside of the steam wand and really clogging things up.

    just personally.

    besides, nothing beats scrambled eggs with good quality butter and cream, done in a small fry pan.

    part of me wants to try this in my long running quest to convert my gf to drinking coffee... She loves pancakes and maple syrup.... nothing else has worked so far.

    My father was doing this in his cafe in the late 1950s (Melbourne CBD) - not sure if he invented it but was one of the earliest ones doing it.

    He used to use the metal milk shake cups to steam the scrambled eggs in - it used to work very well - one side of the machine was the egg scrambling wand the other side of the machine was used for milk steaming.

    The now famous California Cafe in Fortitude Valley also used to do this
    George (god rest his soul) had a special that if you are still hungry after one of his mix grills you would get another free
    After George died the cafe closed and I dont know what is there now

    He and the family were close friends

    Another Greek cafe in Warners Bay Newcastle also did the eggs this way
