Gene Cafe Coffee Roaster $850 - Free Beans Free Freight
    Hey.

Im not sure if any of you follow the show but I have albeit sporadically.. and slowly catching up on previous eps recorded.

Basically theres this ex-pro golfer in there and apparently he has a cafe in syd called Ts Book Cafe. the images of him at the shop is always at the espresso machine.

question basically is - have any of you tried coffee from that place and is it any good? :)

    Re: MasterChef Aus 09

    From the MasterChef website:

Ex professional golfer Lucas retired from the sport last year after a career that took him around the world as a competitor, saw him compete against Tiger Woods, and win the Greg Norman International in 2000.

Known for his trademark pork pie hat, and dubbed Cool Hand Lucas, this sportsman is keen to gain merit for his cooking, not his background, and actually didnt mention his golfing past on his MasterChef application form. "I retired last year and decided to open a café in Randwick. Now its all about coffee. At the moment its an espresso bar but its going well and Im happy about that. It’s a new career for me."
Even more reason to try it.

My son is an avid watcher of this one. And has been enjoying it...I think he even hopes to have a go himself if it it is still around in a few years...though it more than likely wont be.

About time there was a reality tv show that actually inspired people... ::)

Plays golf and loves good coffee what more could you want.

Its a far cry from Master Chef they should have called it "So you think you can cook" ::)

In saying that though its just good to have another cooking show on free to air.

I was going to try out for this! So annoyed, cause the application form basically said you cant have worked in any professional kitchen environment and this guys in a cafe! And I think the naval submariner has worked in the ships kitchen too (which I fancy would be big volume cooking).
I wish I hadnt of let it put me off applying, cause I think I can cook ;D ;D ;D

    Maybe next go round.

Already been done to some extent - called the World Barista and World Latte Art Championships. Would be a great addition to see some sort of collage of the competitors coffee journey.

Funny how the prize is you get to be an apprentice to a renowned chef, and a bit of money. Why not take up a real apprenticeship? I know at least a couple on the show have.

I also reckon the contestants really have no idea just how working in a real commercial kitchen day after day is. No one on the show I think has shown the sort of mettle required to survive more than a short time.

As someone who has worked as a waiter, I must add that you working in a kitchen will make you crazy, if youre not crazy already. I dont think I could ever be mean to a chef in any slight way whatsomever. That job is mental.

Working in Commercial kitchens is great. It takes a certain kind of person to thrive in that situation and crazy is a pretty accurate description.

I think the words "Summer, Hot, Kitchen, and Crazy" can all fit into 1 sentence pretty well.

Personally, I believe they would be able to cope in a kitchen. I believe some of the challenges that appear on the show would at least enable them to ease into kitchen work rather than being thrown into the deep end.

Masterchef Aus seems like a good show, but I heard its got nothing on Masterchef UK. Again, its the first season and I doubt the 1st season of Masterchef UK was much better.

back on the topic, would be nice if some1 had a simple review on the coffee served at this guys joint.

Im a regular at Ts Book Cafe and was even before I knew it was Lucas cafe, the coffee is excellent, they use Allpress which in my opinion is one of the best blends around...

I would have to say its the best coffee in the Eastern Suburbs, the staff are friendly and happy to accommodate patrons requests...

Its in this great secondhand bookshop which has been around for over 30 years, fabulous books too. It has a great big communal table up the back, comfy chesterfield chairs down the front and even seating outside...

    Definitely worth a try.

No worries, welcome to the boards. Sometimes owners etc get on and give their own cafe a plug pretending to be joe public. Hope you find some good info here.

    Re: MasterChef Aus 09

I worked on the Floating Hotel off Townsville in `88 as a kitchen hand, we worked like an oil rig , 90-100 hrs in 7 days and then 7 days off , then in many kitchens in Townsville and Brisbane until i started an apprenticeship and then stopped , i was young and wanted to go out at night, not cook on everyone of them.
I ended up working in coffeeshops (not making coffee at all) as a `cook` serving everything from toasted sandwiches to pastas, steak etc.
The good thing is i still love to cook at home for family and friends ( my wife loves it - she never cooks!)and this show is OK, but these guys that think they are going to go into their own kitchen and run it when this show is over are sadly disillusioned, the pressure in a commercial kitchen that has a high quality output will either inspire them or burn them out ( no pun intended), or turn them crazy :D

And then Kates surprised her friends thought shed be the one going home and had a cry about it? Precious wouldnt last long in a real kitchen.

    Nah, disagree Melicious.

I think her fundamental mistake was not following the recipe. This wasnt an invention test and ultimately she wont find herself working in a kitchen if she refuses to follow the head chefs recipe.

I havent been watching but did last night.
It was the "Classic Recipe" test IIRC.
The test is about making a classic as per the recipe.
In the UK version it would be something like Beef Wellington etc.

It wont be long before the "One dimensioners" all get weeded out.

The theme of the show also seems to be: If youre mediocre, youll finish well in the end. Nothing ever happens to those who arent in the top or bottom.

Yeah, thats a good call. The post comp interviewing highlights seem to focus on only a few of them - some of which have bitten the dust already.

So is the winner going to be a dark horse from the background?

Its funny how you never see certain ones interviewed.

I still think that theyll be completely overwhelmed in a commercial environment.

Sure she should have followed the recipe, but aside from lacking lemon (due to freehanding the ingredients) she produced something ok to eat, where as Kate produced something they said was in danger of being called sushi cause it was so undercooked, and Sam nearly cracked the big fellas teeth on an olive pit, or choked him!

Given that it was meant to be judged on the dishes presented, the lack of lemon looked like the lesser mistake.

btw, Im not disagreeing that shed need to learn to accept the recipe as it comes in a real kitchen, I just think the judging stunk, even by their own standards.

Yeah I guess so, but I thought she was doomed as soon as she told them she didnt follow the recipe.

Kates issue is fixed by having 60 seconds more, Sam wont forget that for a long time...

Wonder if they are being judged on the dish or the overall. I know they say the dish but it is all pretty much subjective anyway.

Maybe they just didnt like her... :-/

A funny take on this is Ben Eltons book Chart Throb. It is a parody of the Idol show, but applies to all reality shows.

The premise is that the winner can be manipulated by editing and that is why the only people being interviewed from day 1 are the finalists or extremely insane people.

I like that judge that is a food critic (cant remember his name)
That downward glance, quickly followed by the eye contact glance, that puts fear in to the contestants

He would make a good poker player

Did anyone notice when the judges were describing what had to be done, that George (the chef) said theyd have to remove the spine from the squid?
    :-?
Just in case Id forgotten my high school biology I checked with a dinner guest later that evening, who happens to be a marine biologist, and she was as mystified as I was.

Otherwise known as the quill... a hard bit inside (that could be mistaken for the squids spine i guess). They didnt talk about removing the beaks though... I wondered if that was what one of the judges chewed on, but it was an olive pit instead.
